This book was not quite what I expected. It assumes that you are already an accomplished cookie baker (I am) and gives recipes that are quite tempting but no methods on mixing. It does offer a few tips on here an there but I would not recommed this book for a novice cookie baker

As a cookbook collector, and an avid baker, I can tell you that this book is worth it's weight in gold. Each and every recipe I've tried, in all the years I've had it (I have the original book), has never produced even one failure. The CLASSIC CHOCOLATE CHIP COOKIES are by far the best recipe I've ever found. The recipes are very easy to follow, and there are many unique cookies in this book.
To the reviewer who "wasn't impressed", perhaps your oven's temperature needs to be checked.

I absolutely love the recipes in this book (I have the original edition).To get the truly chewy effect on some of them, you really have to follow the recipe on the size.It seems odd to use so much dough for one cookie, but they really turn out better that way (instead of 3/4 or 1 inch balls, the recipes generally use 1.5 inches).I highly recommend the snickerdoodles recipe.I've tried many of the other recipes as well over the years and enjoyed them all.I'm looking forward to trying the recipes in the new edition.

I tried 2 recipes from this book and was sufficiently disappointed that I will probably not use this book again. The "Four-Spice Fantasies" were completely bland and puffy/cakey in texture rather than chewy, while the "Oatmeal Cinnamon" cookies, though better than the former, were nothing to write home about. People should let me know if any of her other ones are worth trying.Otherwise I now only go to allrecipes.com for user-rated recipes.

This book has no pictures or fancy illustrations, however it contains recipes that you will love to make over and over again and recipes you will be excited to try next!I am a culinary arts student and I can really appreciate recipes that turn out excellent products without having to tweak them!This book is perfect for those who love to try interesting combinations of flavors as well as traditional ones. Well written and well researched, this is a cookie cookbook that will please beginners, experts, and those in between. Author Linda J. Amendt starts with the basics, including equipment and ingredients, carefully explaining why one would use flat baking sheets instead of jelly roll pans, to give one example. There are tips on hosting a cookie exchange party, mailing cookies, and even a Cookie Problem Solver section.

All of this would be helpful but it's the recipes that make you want to get in the kitchen and do some baking. The ultimate dark chocolate espresso cookies earned a score of 8 out of 10 from my husband the chocoholic. A friend who tried those loved them but thought the cranberry coconut cookies were even better. There are clear, step-by-step directions, and each recipe has a tip or two, including how to store them (frosted cookies should be layered with wax paper, which makes perfect sense when you think about it). I know I'm going to have fun working my way through the yummy-sounding recipes.

I have used lots of cookbooks over the years.Betty Crocker, my families recipe cards, Holiday Cookie Books, you name it.This one tops them all!
The ingredient lists are perfect and easy to read,the directions easy to follow,from Novice to Master, you couldn't ask for more!
There is a great section in the beginning about ingredients, and each section opens with methods to make those type of cookies.
The color photo inserts are a real added bonus, just beautiful.
There is a section for problems,such as if your cookies are too dry,along with solutions.
There is a supply section and even the index is pristine.
I would recommend this book for bakers of all ages, and I know it will become the most treasured resource in your library!

This is the BEST cookie book on the market. Linda Amendt is a primo cookbook writer, and I sincerely wish all cookbooks were written as well as hers. She is typically thorough, comprehensive, knowledgeable, but also very easy to understand and read. This book includes a great clear discussion of cookie baking equipment, ingredients (yes, there are lots of different kinds of sugar which have different results), do's and don'ts, problems and how to fix them, which cookies ship well, and even how to win cookie baking contests. All the recipes are easy to follow, clear -- and they all sound delicious. There are whole chapters on brownies, chocolate chip cookies, dream cookies, bar cookies, and more. Some are old favorites, some are interesting variations of old favorites, some are utterly exotic adventures, and some are just -- "OOOOOH, that sounds so GOOD". My favorites so far are German Chocolate Brownies,Orange Marmalade Cookies, White Chocolate Chip Cookies (with macadamia nuts and almond extract!), Banana Rum Oatmeal Cookies, Butterscotch Dreams, and Favorite Sugar Cookies. But there's alot more to go, and my family and friends will be feasting throughout the holiday season, and well into the coming year.
Some of the other cookie books on the market are pretentious coffee-table books(does a cookie really have to be a confection that looks like a sculpture?), slapdash (you wonder if anyone actually baked these cookies), or just plain ordinary. 400 Sensational Cookies escapes all those cookbook traps, and is a solid, practical book -- one everyone will actually USE, not put on the shelf to gather dust. I can foresee where my copy will be dog-earred with use, and I might have to buy another copy in a couple years. I'm buying this book for all my cookie baking friends for Christmas. It's the Best!

400 Sensational Cookies is a wonderful and incredibly informative book that belongs in the kitchen of everyone who loves to bake cookies.

There are detailed chapters on ingredients and equipment, and an extensive chapter on how to bake perfect cookies.The ingredients chapter is quite impressive.The author not only discusses individual ingredients but also explains how different ingredients interact with each other and the results they produce in cookie baking.In the thorough equipment chapter, she covers all of the pans and tools used in cookie baking.The how-to chapter is terrific. It is packed with techniques and baking instructions to help you turn out great cookies.Have problems with your cookies spreading out really thin, burning on the bottom, sticking to the pan, or they turn out tough or just don't have much flavor?This chapter provides the solutions.There's even a quick reference Problem Solver at the back of the book.Although already an experienced baker, I learned quite a lot from reading this book and I'm now an even better cookie baker.

The recipe collection is quite extensive and there are so many new and exciting recipes created by the author to explore.I've tried a number of recipes from this book and they have all turned out beautifully and have really great flavor.They are so good that it's hard to stop eating them! Some of my favorite cookies so far are: Buttermilk Chocolate Chip Cookies, Amaretti, Spumoni Biscotti, Oatmeal Pumpkin Cookies, Cranberry Coconut Squares and Almond Pockets.I love how much flavor these cookies have and I can't wait to try even more of the author's first-rate recipes.My family is clamoring for more of these yummy cookies!

These cookies are not only really delicious, they also are very pretty and many are quite colorful.The photograph pages contained in the book are beautiful and the cookies seem to jump right off the page.The cookies I've tried look just as good as the pictures.

I love the tips included on each recipe page and all of the neat cookie ideas the author included throughout the book.They're very helpful and really add to the value of the book.

I'm giving a copy of 400 Sensational Cookies to everyone I know for Christmas!

I have tried several recipes and the cookies came out fantastic! I've had colleagues,family and friends taste some of the cookies I've baked from the book and they are in love with it. Some of the recipes are pretty basic and some are more advanced. If your looking for a cookie book that doesn't involve alot of ingredients or you don't want to put forth the effort to make a great cookies then get a easy bake oven! I haven't had no problems or complaints about the recipes. And as you get more familiar with the basic ingredients, you can add your own spin to it. Although it is not 500 different cookies, their are still alot of great cookie recipes to be made :)

Editing problems not withstanding, the primary problem with this cookbook - to me - is that I expected a cookbook with 500 cookie recipes. Counting "variations" is, well, cheating. Invariably purchasers feel duped because they aren't getting what the title says.A secondary problem is that though the book's size is visually appealing (it's about 5 or 6 inches square and about 1.5 inches thick) such small pages require the print to be very small, making it difficult to read.And last but not least, the book doesn't lie flat when open, meaning you must put a bookmark at the page your're using, then constantly reopen the book to read ingredients or mixing directions, which means washing your hands so you don't get butter and sugar and flour on the book.

When I first ran across the "500" series of cookbooks I enthusiastically added a number of them to my Amazon Wish List.I'm taking them all off now.

The 500 Cookies provides 125 recipes for a variety of cookies and bars for everyday use to special occasions.Each of the 125 recipes has four minor variations that tweak the item into a different version by adding a new flavor profile. Overall it is an average cookbook but for those who are skilled in baking like my wife it provides base recipes that can then be used to make their own variations while using this as a widespread springboard and because the recipes are chosen for easy variations they lend themselves to creating your own as well.We have only found a few recipes to be a little vague on the directions but overall have not had too many problems with this book.Overall well recommended for those that are looking for a lot of cookie recipes that can be built on.

I recieved this book as a Christmas present a year ago. This book does not have a good selection of cookie recipes and often is very confusing. I have tried numerous recipes and all have been horrible. I do not believe these recipes were proofread or even tried out before being published. One example of the recipes being "confusing" - recipe calls for 1 cup (5 oz) macadamia nuts. Now, last time I checked 1 cup = 8 oz. So which measurement do I use??? This type of problem is in almost ALL the recipes! I just don't get it... I do not reccomend this book at all. You will waste your expensive ingredients just like I have!!!

I was given this cookbook as a gift and since then, I have given it to 18 others.Now I am ordering 3 more to give to my kid's teachers.With 4 kids, they are always asking for cookies.My cookies were either flat or too cakey.Since I have used this book, my kids and their friends think I need to open a cookie shop.I have yet to have a recipe fail.When people ask for my chocolate chip cookie recipes, I often just buy them the book.

Since chocolate chip cookies are about the only kind that my kids ask for or will eat, I figured this was the cookbook for us.So far I have tried 4 recipes from this book.The first two came out with a rating of 'acceptable, but not as good as Mom's', the third one I tried was on page 43, Nutty Chocolate Chip Cookies.At first glance, I thought they left out some ingredients, but I followed the recipe exactly, and to my surprise, the result was a very light, and very delicious NOT sweet cookie - no sugar 'high' after eating these (nice for a change).I thought this recipe made the book purchase worthwhile, although my friends still like my original recipe best.The fourth experiment, Mocha Dreams, did not appear to have any missing ingredients, so in good faith I proceeded with the recipe.I mixed and mixed and mixed with my little electric mixer, and the consistency of the batter never changed from being like sand.Finally, I broke down and added a forbidden egg white (these were supposed to be egg-less cookies) and enough vanilla to make a somewhat workable batter.Once these cookies were done, I served them to my family, and received these comments:'wow!', 'great', 'very rich', 'delicious'.I gave this book a rating of 4 because my friends still like my original chocolate chip cookies better, and because I had to modify the Mocha Dreams recipe (I don't like having to modify baked goods recipes, it makes me nervous - it's not quite like modifying a soup or stew recipe).None-the-less, I appreciate the variety of ways that are presented in this book for making our family's favorite cookie.I will continue to try out the recipes from this book - one per week - so in two years I may be able to write a much more educated review! ... I borrowed this book from a friend in December and I still haven't given it back! I use it so much, I got cookie dough all over it and I finally had to have one of my own! I have used many of the recipes in this book and each one has turned out better than the last! The butter cookies I baked for the holidays were so good my family couldn't believe they weren't from a bakery! I get alot of requests for the peanut butter cookies too! This is one of those rare cookbooks that I feel confident making any recipe from and bringing it to a party. I have yet to find one that doesn't taste great! You have to have this book! And such a low price, what do you have to lose?!?

Thank you so much for this wonderful cookie book. I have been baking for my family for over 45 years and this cookie book is my favorite.I collect cook books as a hobby and where or how I come in to posession of this one I don't remember, but it was a luky day for me. At Christmas the girls and Ihave a cookies exchange and it is a real treat for us all.I have fourgirls or my own and five by my second marriage. We also have 14grandchildren so you see there is a need for lots of cookies. I am hopingthat is year I will be able to afford to buy each of the girls a copy ofthe book to include in the cookie exchange. Since I have retired it hasgiven me great pleasures in baking from the book and just reading it overand over again.The illustrantions are great and it makes is so easy tofollow the instructions.I have yet to be disappointed in any I havetried. There are many favoites so it is hard to single out one.The littleones love the no bake turkey cookie.It was a great hit at school and lotsfor fun to make with them.When all of the family is grown and gone out ontheir own, it is a great honor to be a grandma and have a loving family.You my want to know who I am, but I go by lots of names.Pops calls myHoney and the rest of the family has a special name they call me.     I must agree that something is wrong with several recipes.It almost looks like the quality control between the list of ingredients and the directions is missing.In addition, several of the recipes we have tried have resulted in cookies that are extremely thin almost like the butter/flour ratio is off.Did anyone try these recipes before the book was published?

    This book has the same, similar, or a bit variation and not much of correction of recipes from their other cookie book. They change some of the names of the cookies.
    A short paragraph in the beginning would help to describe the background/history, to give character and taste of a cookie, but they don't have much of it.
    A lot of mistakes in the direction area, for examples: a recipe does not tell you how thick you are supposed to roll out the dough unless you just look at the picture, some cookies look thicker or thinner in their pictures than what the direction tells you to do, etc, etc.
    It would be nice if they revise this book to correct the recipes.

    I did not originally purchase this book from Amazon, but have subsequently purchased it here as a gift, and have had nothing but success with the recipes.In particular, I recommend the "walnut crisp cookie", which has ground walnuts ( I've made it with pecans with equal success) and instant coffee grains. (I used folgers instant, not some snobby espresso). No eggs.Lovely, crisp,and the flavor improved as they were stored.I think the secret of this book is that it is a European/British product originally,and the cookies are closer to their "biscuit" than our soft/sweetAmerican cookies.They freeze beautifully, and the recipes make a limited number (18?) so it is possible to experiment with a number of recipes.I only hope the fates let me stick around long enough to try most of them!!(And PS:to the writer of the only other review:Brownies belong in the cookie category, owing to their texture, baking format and serving shape.They qualify as bar cookies, and that is where you will find them in most cookie collections.)

    I have been fairly disappointed by this book. It has the looks of a winner (luxurious design, hardback, gloss pages, excellent photos) but behind the facade it cannot shake off the feeling that it is a rush job.
    It is divided in sections:
    Cut out cookies
    Rolled and sliced cookies
    Drop cookies
    Pressed and piped cookies
    Filled cookies
    Bars and brownies (I could never understand why brownies are considered as cookies)
    Wafers and macaroons
    Tartlets and tea cakes
    Holiday cookies

    The book starts with an introduction and the shortest ingredients and methods section I have ever seen in any cookery and pastry book (one page for the ingredients and one for the methods). Needless to say they are not enough to describe anything much. The only fat included in the ingredients page is butter but many recipes call for shortening or margarine. Having said this I cannot understand why a book published in 2008 with all the hype of the last decade on the unhealthy qualities of shortening and hydrogenated fats would include either shortening or margarine in its recipes. I am a professional pastry chef/baker and my profits would be boosted if I used these fats instead of butter since their price is cheaper by as much as 80%. Their flavor cannot compare to butter and for those that have not got it yet: SHORTENING = CANCER!

    Both volume and Metric weights are icluded in the recipes.

    Many of the recipes are very similar with slight variations of the ingredients, so one recipe has white chocolate chips and another one, almost identical has dark ones. Or by slightly varying the sugar and butter ratios one recipe becomes two, the one being eg slightly rounded after baking and the other thin.

    None of the recipes have any kind of description on the page. Its just the method of preparing and baking and the photo. So if you want to know the history of a cookie, how it was traditionally made and baked or even the quality it should have after baking eg soft, hard, chewy in the middle, forget it.

    Another thing pointing to a rush job are the names of the cookies. It seems as if the author had to baptise most of the cookies at once so she named each one by the different ingredient in each recipe or by whatever came to her head at the time. So eg a peanut cookie is called a peanut cookie, but an almost identical recipe cannot again be called peanut cookie. So it is called peanut delight, star, crisp, thin no matter how indescriptive of the truth or how similar to the first recipe, or it is named after one minor ingredient eg poppy seed cookie, even though the peanut constitudes 25% of the recipe and the poppy seed only 1%. In this way you don't know which recipe to choose to utilise the ingredients you have at home unless you study the whole ingredient list of all the cookies!

    And having mentioned this even studying the ingredients may not help you since some are missing ingredients. Case in point the Crazy cookies on page 332. They are clearly chocolate cookies, but there is no chocolate listed in the ingredients. Yet in the method it states to melt the chocolate.

    Another thing that has puzzled me is the fact that many recipes seem to be inbalanced as to the butter/flour ratio. That is, the butter is more than the flour and the chocolate/liquid /butter weight is more than the dry ingredients weight. I don't know if this is a typo, but it does exist in many recipes and in my experience these recipes will not work. I must admit I haven't tried these 'inbalanced' recipes, but don't blame me. Why ruin excellent ingredients on suspicious looking recipes?

    Some good recipes are:
    Coconut cookies with rolled oats (change the shortening with butter)
    Hazelnut cookies
    Fruit and nut cookies
    Date and nut bites
    Raw sugar raisin cookies
    Pecan date cookies
    Mixed chocolate cookies
    Golden ginger crisps

    Sadly, this is is a wholly unusable book.It is poorly indexed.The pictures are not with the recipes - they are in a separate section.The pictures are numbered by recipe not by page number so you have to go back to the index to find the page number after looking at picture. (Sounds confusing? It is.) And forget about finding a picture after locating the recipe first!

    Bound as it is it does not lie flat.And the pages are too small to slip under things to hold them open.

    The recipes that we have made are fine, but the book is just to awkward to be practical.

    Stick with Betty Crocker.

    I hate giving this cute book a bad review, but it has failed me many times. I love that it has pictures of each cookie, and all manner of facts about cookies, but the recipes are not good. I have made maybe five or six cookies from here now, and only one (anzac biscuits) was worth eating. I have been a professional baker for eight years now so it's not like I can't follow a recipe. I think they might not have been tested enough really. It's a shame, but I've given up on this book. Too many sub-par cookies due to it's pages means it is going in the back of cookbook cabinet. I'll keep it around for the fun trivia, but I don't plan to bake anything from it again.

    Best cookie book EVER! A huge variety and all made with good ingredients--butter, eggs, etc, NOT shortening and gelatin! Easy to follow directions and the cookies have nicely written histories. Cannot recommend this book any higher!!

    A good book for beginners and for people have been baking for longer especially she includes pretty much every cookie I can think of or would ever want to bake with very clear directions. All this for a great price.

    This is a beautiful "coffee table" book.I have tried a few recipies, very rich and delicious cookies.They even have cookies you can give, packing instructions are there as well.These recipies are slightly more difficult than your ordinary recipe.Most of the cookies are ingredients you would ordinarily have in the pantry.They have The Classics, Cookies for Kids, Party Cookies, Cookies for giving, Holiday Cookies and Decorated Cookies.Very nice book overall!I rated 4 stars because there ae some books out there that cover your favorites, look around and enjoy cookies!

    This is an awesome cookbook.The first think that I love about it is that it has pictures for each of the recipes.The second thing I love about it is that it is spiral so that it will sit in a book holder or lay flat on the counter to read the recipes.The next thing is that there are no super difficult recipes in the book, it's all beginner friendly.And the last thing, the recipes are awesome.I have had the Chocolate Chocolate Chip Shortbread cookie which was AWSOME!!I would recommend this to anyone, novice to the expert.Great book!!

    This book contaian so many different recipes for chocolate chip cookies. It's wonderful. So far the recipes that I have tried are great. Some are a little too sweet with the full amount of sugar, for my buds. I scale back when baking a batch for myself. Even people with sweet tooth extremes like most of the ladies in my family, like the cookies better without all of the sugar. The flavors come through, it is a highly rewarding chocolaty experience. Enjoy.

    The recipes in this book are amazing, and the introduction is very helpful and informative. She tells you flat out to use good quality ingredients, and not to use no/low-fat ingredients - these are meant to be savored and enjoyed. While I like to cook healthy, if you're going to eat a cookie, you might as well make it worth the splurge - just be sure not to eat too many (if you can!). She gives tips with each recipe, that are truly helpful, and even gives suggestions how to give a little variation to the recipe. I am determined to try most of these recipes, but have tried only about 7 so far. Out of those, only 1 didn't work out for me (the malted milk ball cookies), but I overcooked them so it was my fault. The buttermilk choc. chip brownies have become the requested dessert for my father and sister's birthdays (though I have to leave out the pecans since they're both allergic). The butterfinger brownies, caramel surprise cups (amazing out of the oven or warmed in the microwave), and pb cup cookies never last if my brothers find them, and my mom and I also love the chocolate chocolate chip shortbread cookies. The Holy Smokes Cranberry cookies are also amazing! ( I was also surprised to find out in her notes that they are served at a restaurant less than an hour from my parents house). To sum it all up, if you love cookies and chocolate, this book will not disappoint.     This is an amazing book. I own Martha Stewarts cookie book which has amazing recipes, but I needed a book just for the kids. This book is it. It has festive cookie recipes, classic cookie recipes and so much more.

    Not wanting to make those fancy cookies for the little ones, who just want something yummy and eye appealing, this book has it all. Totally happy with it, the recipes, the easy to follow directions and the clear format. It is a win, win, win situation. I too use this book when I just want cookies to snack on without the kind of long list of ingredients other cookie books provide.

    Although this book is out of print, there is an updated version of it, right here on amazon for a swell price. Enjoy!

    Simply said . . . the best!Ever!I bought this book in 2000 and have used it pretty much exclusively since then for my cookie baking.The base dough alone is super (and easy to make). . . but then you get to add stuff.And each recipe makes a lot of cookies.Some family favorites are the crispy rice shortbread, graham washboards, malted milk balls, tangy lemon wedges, chocolate chip, biscotti, and my particular favorite . . . the minted lemonade cookies.No pictures which is unfortunate (look at the dust jacket), but I would rather have this book without pictures than be without this book. If you bake cookies, you need this cookbook . . . and only this cookbook.

    I seriously love this book.The Malted Milk buttons, Zesty almond lime sticks.....all are great. These are the two original favorites from my first use of the book 10 years ago.I made a whole tray of 10 different kinds.I felt so accomplished going to a family gathering!Show stopper when walking into a room full of accomplished cooks coming across 3 generations.

    Since then I have bought this book for many people, on many occasions: birthdays, hostess (put in a basket of goodies or even prepared dough) weddings, Christmas...

    I make extra Zesty almond sticks for me so I do not have to share and I make a separate tin of malt buttons for my father in law...We all enjoy these cookies.

    I truely appreciate this author.Very helpful and practical tips making it fun to bake.Worth every dime to own this book.

    This little book is worth every penny.Don't judge it by its size (it's tiny), because it really packs a huge number of tasty cookies into one small space!There is one "master" cookiedough recipe to which various things are added to make everything from basic shortbreads to gingerbreads to chocolate chip cookies to thin, espresso-chocolate crisps.

    Since each "master dough" recipe makes enough for two full recipes of cookies, making party cookies or cookies for presents is easy.And if you don't want to make so many cookies at once, the dough freezes well so that you can make fresh cookies at the spur of the moment!

    I own probably 15 cookbooks for baking desserts, but when I want something fast and delicious, this is the one I go for every time.

    I bought this book to prepare a variety of cookies for an annual holiday gathering.Because all the recipes begin with the same dough, I was able to make and bake all the treats in one afternoon and freeze them for the party the following weekend.None of my guests knew that the cookies had such similar beginnings, and everyone raved about them.I'm not sure I will try every recipe in the book, but a few of them are now my "tried-and-true" favorites for cookie swaps and parties.

    My best friend from college bought this book as a joke.But it really has produced a few great cookie results.I especially enjoy that the recipes contain ingredients that are common to most households--and that I didn't have to go out and buy anything that I wouldn't normally have on hand.

    As one poster mentioned, sometimes she does trade fat grams for carbohydrates, which I don't love, but for some, lower fat is all we need.I have made the oatmeal chocolate chip cookies (GREAT), the sugar cookies (excellent), but the best ones I've made were the linzer tarts.They really didn't taste low-fat at all!

    4-0 out of 5 stars Very tasty reduced-fat (if not always reduced-calorie) cookies
    The good: I have made about 15 recipes from this book so far.All ranged from "good" to "excellent", a very respectable turnout.Not a single one was unpleasantly tough, dry, or otherwise failed.They compare VERY favorably with other lowfat cookies I have tried.I will definitely be making some again, and trying others. My personal favorites were apricot almond streusel squares, `gourmet' variation of the chocolate chip cookies, pecan pie squares, crunchy peanut cookies, and cornmeal maple pecan twists.

    In general, the recipes in this book are reliable, tasty and have significantly reduced fat (especially saturated fat) as compared with comparable `regular' cookies.E.g., in a typical ~ 2 cup flour recipe, there is usually ~4 T butter here as opposed to 1-2 sticks, and egg yolks are usually reduced or eliminated. The changes do reduce overall dough volume and yield a smaller batch size, which in my opinion is all to the good.(If you're buying a reduced-fat cookie cookbook, chances are you don't want 5 dozen extra cookies lying around every time you head to the kitchen to try a new recipe).

    Other pluses: these recipes use familiar, inexpensive and natural ingredients that you already have on hand or can easily find: no weird or artificial diet substitutes.Unlike most low-fat recipes, these cookies are portioned normally and even generously; there is no artificial lowering of the fat content by instructing you to fashion micro-cookies of which you would have to eat 10 to equal one normal cookie.In fact, in several recipes I ended up with more cookies than the listed yield, which almost never happens to me.

    This book also seems like a labor of love-- the recipes are unusually well-tested and fine tuned. The instructions are clear, careful and include useful details, like tips on how to reduce the number of dishes you dirty in the preparation.The book belies its small size with lots of helpful or interesting marginal notes and voluminous recipe variations, many of which yield genuinely different recipes (not just something obvious like substitute one variety of raisin for another). You'll find a wonderful diversity of cookie flavors, textures and styles and familar standbys as well as unique recipes of the author's own creation.

    The bad:First, I found a few baking times to be off, in particular, too long (my only general `recipe testing' complaint). The author is good about providing other done-ness cues, but I'd recommend you start checking cookies much earlier than indicated.

    Second, although these recipes are very good, there were some clear `consequences' of reducing the fat.Several cookies had telltale textural issues such as being soft and cakey instead of tender-chewy, or being hard-crunchy instead of tender-crunchy.Also, almost all became stale frustratingly quickly, in several cases, within a few hours.Some took well to refreshing, freezing, storing unbaked dough to bake off as needed, etc., but I had to figure this out on my own.Given the pervasiveness of the premature staling problem, I would really have appreciated more attention to storage advice and/or strategies - no one wants to end up throwing out most of one's labors away.

    Finally, the philosophy of this book is very much of a mid-nineties `reduce fat and who cares about anything else' style, and that philosophy, as most people would now acknowledge, suffered from some major nutritional flaws.Again, the recipes do succeed, and admirably, on satisfying the criteria they set out to satisfy (they are lower fat, and they taste good-- no mean feat).However, if you flip through the nutritional information handily accompanying each recipe, you may notice that many of these cookies are very high in refined carbohydrates and calories. Many of the bars, especially, hover around the mark of 200 calories EACH (and some even more)-- that's a lot. And of course you're not going to eat just one.Morever, many recipe variations are rather decadent (calling for additions of things like nuts, chocolate chips and caramel), with added fat but no added calorie information.I find all this to be off-putting in a book that promises `healthy alternatives that can be eaten without guilt.'

    In fact, a number of these recipes seem to have nearly the same total calories as the `standard' version whose fat has not been assiduously reduced. In such cases, you're not so much saving calories as you are exchanging them--by and large, fats for simple carbohydrates.Arguably, this is a trade for the worse, as it increases the "empty calorie" count of your treat and decreases the satiety that fats provide. Then there are the losses that come along with the fat for simple-carb trade--e.g., lower-fat cookies go stale much faster and without the fat, they can taste too sweet.In many cases the new cookies, while still very good, are obviously missing elements of the old standbys.If you slash the amount of chocolate chips in a chocolate chip cookie or the amount of nuts in a Russian tea cake, you can tell that those elements are missing, however appealing the new versions may be on their own terms. This, in combination with a belief that the new cookies are `healthier' (and are going to be stale tomorrow) can lead us to eat an extra cookie or two and thus end up with more calories than if we'd just stuck with the family recipe from the 50's.

    I'll now remove my party-pooper hat and reiterate that the author has succeeded in producing a book of wonderful-tasting, diverse and easy cookies with less fat.The book is absolutely in the top tier of the low-fat dessert cookbook family.If you are selective, you can also find many tasty choices that are not JUST reduced fat, but also sport an impressive nutritional profile for dessert.And the book is generally a pleasure to cook and read from. So, I give it 4 stars because it mostly delivers on what it promises.Just don't expect the recipes be nutritional miracles.

    I bought this recipe book when I really did not have the money to invest in recipe books. Now that I can buy the pricier books I find myself constantly returning to this old favorite. Very very good recipes. Lowfat goodies made with easy variations. I highly recommend it.

    Ooh I just love this book. Every recipe sounds realy good and there's so little fat that it makes you feel less guilty indulging in the cookies. I've only just purchased the book and have tried one recipe so far the Chocolava cookie and it turned out great.     I first got this book from the library, and enjoyed it so much I had to buy it. It's a great intro to baking for a child who is interested in cookie making. My daughter and I made a few of the recipies together, and she was able to follow the directions easily. It's written in a kid friendly way, and there are lots of fun to make cookies.
