I've been using this cookbook for years and have never been disappointed.It is such an easy cookbook to follow and the recipes are easily customizable.Once you've made a dessert, you can add your own special tweaks and touches without ruining the dessert.As a gluten-free person, this cookbook has made desserts enjoyable again.I always get special requests for recipes and oodles of compliments every time I bake something from it.I hope many will enjoy this like I do.

The book jacket on this book states that the recipes are suitable for those with wheat gluten allergies. When I read the recipes, I discovered that many of the recipes contain spelt flour.Spelt is a form of wheat.We are gluten intollerant, and no recipe with spelt would ever be OK on a gluten-free diet.If you are also gluten intollerant, plese be careful if you decide to try the recipes in this book.

I bought this book hoping that I could adjust some of the recipes to use splenda or stevia to substitute for some of the sugar in the recipes, since otherwise, the recipes usually are low enough in total carbohydrate grams to be do-able on even the more restrtictive low-carbohydrate diets.The best luck in terms of lowering the sugar content while still keeping a good flavor and texture involved switching out half the sugar for splenda, and not using stevia at all except in the darkest chocolate of the recipes, where the herbal note of stevia doesn't compete with the other flavors.The sugar is still there, but there's less, and a low-carber can feel like they're not being _completely_ bad, as well as not _completely_ deprived of desserts.

Some of the recipes involve higher-carb fruits like bananas, but in general, the use of the nut flours brings most of the recipes (using your food counts book) to within the realm of possibility.

I am allergic to wheat and choose a vegan diet. I purchased this book due to the summary and fabulous reviews only to find that the title of this book is completely innaccurate. It is NOT dairy free, but instead it is lactose free. Most of the recipies call for at least 4 eggs and often they're separated, which makes it difficult to use egg replacer. The use of nuts is an excellent alternative to flour and I feel that this book is suited to persons with a wheat allergy. However, this book is not suited for those that choose to live dairy free. ... Read more

The BMI Czech Republic Retail report predicts that the country’s retail sales will grow by 19% duringthe forecast period, from an estimated US$54.21bn in 2008 to almost US$65.00bn by 2013. The rise indisposable incomes, easier access to credit, plus the increasing number of large retail outlets and shoppingcentres and growing car ownership are key factors behind retail market expansion. EU membership(gained in 2004) and substantial foreign direct investment (FDI) continue to spur growth, contributing toforecast annual retail sales growth of 4.4%.

The Czech Republic’s nominal GDP in 2008 was US$217.44bn, with a decline of 2.1% expected in 2009as the economy shifts into reverse. Average annual GDP growth of 2.2% is now predicted by BMIbetween 2008 and 2013. The population is expected to remain static, at 10.4mn, throughout the forecastperiod, but GDP per capita is predicted to rise by nearly 10% by 2013, reaching US$23,078. Ourassumption of consumer spending per capita is for an increase from US$10,439 in 2008 to US$15,605 by2013.

Food expenditure as a percentage of GDP in the Czech Republic is expected to decline gradually from anestimated 5.3% in 2008 to a projected 4.8% in 2013. This reflects the broader expansion of the economyand ability of consumers to purchase a wider range of consumer goods. For example, BMI data suggestthat OTC pharmaceutical sales will grow by nearly 32% from an estimated US$0.81bn in 2008 toUS$1.06bn by 2013; while automotive sales will grow by a similar magnitude, from an estimatedUS$14.3bn in 2008 to US$18.9bn.

Other retail sectors that are likely to see substantial growth over the forecast period include consumerelectronics, which BMI predicts will expand by nearly 29%, from an estimated US$4.6bn in 2008 toUS$5.9bn by 2013.Based on the Czech Statistical Office (CSU)’s ‘Money Income and Expenditures per Average Household’data, BMI estimates that retail sales of furnishings amounted to US$5.33bn in 2008 and should increaseto US$6.34bn by 2013; while sales of clothing and footwear are forecast to rise from an estimatedUS$3.46bn in 2008 to US$4.13bn by the end of the period.

According to UN data, in 2005 just under 37% of the Czech population was in the 20-44 years age range.This is forecast to dip only slightly, to 36%, by 2010, thus continuing to represent a key element of futureretail spending. The proportion of the population classified by the UN as ‘active’ was 71.2% in 2005, andshould remain around this level by 2010.

Unemployment was 4.4% in 2008, its lowest rate since the beginning of our forecast period. Following anexpected rise to 8.5% in 2009 as a result of the global economic slowdown, BMI forecasts that it willbegin to decline again in 2010 and reach 5.5% by 2013.

Retail sales for the BMI universe of CEE countries in 2008 amounted to an estimated US$1.20trn, basedon the varying national definitions. Total consumer spending for the region, based on BMI’smacroeconomic database, amounted to US$1.82trn. Russia, Turkey and Poland together in 2008accounted for an estimated 83% of regional retail sales, with their combined share expected to reachalmost 85% by 2013. In BMI’s Q110 Business Environment Ratings (BER) matrix for the 15 key markets of the emergingEurope region, the Czech Republic occupies third position, a big improvement from its previous ranking.

Having been placed eighth in Q409, the country’s mature and steady market conditions are providing asafer bet for food and drinks players than emerging, but also volatile, Turkey, for example. While letdown by its modest forecast food consumption growth per capita and the currently negative trade balance,the overall score is buoyed by maximum scores for soft and alcoholic drinks consumption per capita, aswell as by the near-perfect score for food consumption per capita.

Nevertheless, although the forecast food consumption growth is modest, the sector is still expected to posta 16.61% increase in value between 2009 and 2014, as measured in local currency terms, even though2009’s difficulties will artificially boost the growth rate. The prolonged economic difficulties are turningconsumers towards more economical products, including discount items and private label goods. All ofthose factors will be negatively reflected in the development of the value of the food and drinks market, atleast in the shorter term, compounded by political wrangling over 2010 budget. In the meantime, anumber of retail operators have already cut down the number of non-essential lines they stock. By 2014,the value of food consumption in the country is expected to reach CZK243.1bn (US$13.8bn).

On the purely economic front, we hold to our view that the rate of economic decline will have begun tostabilise during H209, as both external and domestic demand conditions tentatively improve.

Additionally, we stress that - despite this improvement - economic growth over the medium term will beconstrained by European Union (EU)-wide deleveraging, which will weigh on external demand for Czechgoods going forward. Nevertheless, during Q209, household expenditure increased by 1.6% y-o-yfollowing 1.8% growth during Q109. This is in marked contrast to elsewhere in Central and EasternEurope (CEE), where consumer spending has been hit hard by rising unemployment of falling incomes,although retail sales did plunge in Q209.

In terms of major industry developments, despite a steady domestic performance, leading CzechRepublic-based food processor Hamé reported a 2% year-on-year (y-o-y) H109 (January-June 2009)sales contraction. Hamé was weighed down by the inability of many of its suppliers, particularly inRussia and Ukraine, to meet payment deadlines, which has forced the firm to impose stricter parameters.

In the meantime, its compatriot bakery group - United Bakeries, a subsidiary of Luxembourg-basedbakery group European United Bakeries - denied rumours of a take-over, although the continuation ofthe economic downturn may reverse its position. In other negative news, Anglo-South African brewinggiant SABMiller announced that it would reduce its annual beer volume growth target for its Europeanregion to 2-4% over the medium term, from the previous target of 4-6%, in the face of flaggingconsumption in its key markets, which include the Czech Republic and Poland. ... In BMI’s Business Environment Ranking table for Central and East European (CEE)’s food and drinkenvironment, the Czech Republic is found in a much improved second place - which is shared withSlovenia - out of 14 key markets surveyed in the region. The country enjoys stable political andeconomic environments, supported by a well-established foreign direct investment (FDI) climate andtourism. The Czech Republic also boasts excellent soft and alcoholic consumption per capita, with thelevels of soft drinks consumption expected to continue rising strongly in the coming years. However, interms of individual segments, beer sales are expected to continue experiencing difficulties, under pressurefrom non-alcoholic varieties and wine in particular, with the Czech Republic’s regional position likely toworsen in coming months. Additionally, the volume sales of non-alcoholic drinks declined by 1.4% in2007, largely due to higher prices, which represents another threat to the country’s regional position.In fact, the competition and the pressures of price-sensitive consumers in the domestic market are pushingmajor domestic players to look abroad for growth. In August 2008, although it announced that its firsthalf sales increased by 12% year-on-year (y-o-y) to reach CZK2.55bn (US$166.4mn), Czech foodcompany Hamé reported that most of this growth was achieved by its foreign subsidiaries. Moresignificantly, exports to countries where Hamé does not have a subsidiary shot up 80% y-o-y, indicatingthat the company will increasingly rely on foreign markets to achieve future growth.

Nevertheless, the country will remain an attractive destination for food and drinks industry activities. Thelatest entrant into the canned foods sector is Chinese Shanghai Maling Food Co Ltd, which in May2008 commenced operations at its new factory. The location, chosen because of Czech tax breaks and thewide availability of meat as a raw ingredient locally, will enable Maling to bring its Chinese foodproducts to numerous Chinese citizens living across Europe. The investment has attracted much attention,as the usual direction of food and beverage investment is from west to east.

In other news, despite difficulties facing the beer segment in the country, major Czech brewer BudweiserBudvar announced that its 2007 sales outstripped the market average. In March 2008, the brewerreported a major boost in American exports, which soared by 37% from 8,000 hl in 2006 to 11,000 hl in2007, due in large part to its distribution agreement with American rival Anheuser-Busch. Similarly, inMay 2008, the Plzensky Prazdroj brewer posted a 8.8% growth of its 2007 sales.
