Product Description
Building upon the scope of its predecessor, Dairy Science and Technology, Second Edition offers the latest information on the efficient transformation of milk into high-quality products. It focuses on the principles of physical, chemical, enzymatic, and microbial transformations.

The authors, highly regarded educators and researchers, divide the content of this book into four parts. Part I, Milk, discusses the chemistry, physics, and microbiology of milk. In addition to providing knowledge of milk properties, this section forms the basis for understanding what happens during processing, handling, and storage. Part II, Processes, illustrates the main unit operations used to manufacture milk products and highlights the influence certain product and process variables have on resulting products.

In Part III, Products, the book integrates information on raw materials and processing as they relate to the manufacture of products. This section also explains the procedures necessary to ensure consumer safety, product quality, and process efficiency. Part IV, Cheese, describes the processes and transformations (physical, biochemical, and microbial) relating to the manufacture and ripening of cheese, starting with generic aspects and later discussing specific groups of cheeses.

An important resource, Dairy Science and Technology, Second Edition provides a thorough understanding of milk’s composition and properties and the changes that occur in milk and its products during processing and storage.  ... Read more

4-0 out of 5 stars A good first book
I have children who have egg, nut and dairy alllergies so I was really excited to find this book. I have been cooking special meals for them since they were little so the recipes here are not too exciting to me. However, for parents who are just starting to cook special meals for their children, this would be a very good first book. What I like about it is that the author does not use artificial egg replacers in her desserts and she does have a large number of desserts/cookies/candy recipes. There is an interesting recipe that uses 7-UP! It is called "Milk Free Biscuits".Now that I would like to try.
The Singapore Mom

4-0 out of 5 stars A must-have if you've got more than 1 kid and not all have allergies!
Is there anything worse than having your daughter who LOVES French toast sit next to your son who is allergic to milk and eggs? Enter this book to the rescue.

With a big, clean format, this book is heavy on the areas where these allergies cause problems. She's got a ton of great-tasting cookie, cake, and bread recipes. And, yes, several wonderful look-alike, taste-almost-alike recipes like egg, nut and dairy-free French toast! (My husband actually likes her version of French toast better than the original.) Her cake and frosting recipes have saved my son's birthday parties. Even school moms whose kids have no allergies have asked me for some of these great recipes. I have thoroughly enjoyed EVERYTHING we've tried from this book.

I am giving it 4 stars instead of 5, however, because of the high price and lack of photographs. For $24 (and after seeing the cover) I expected pictures. If you're not going to give me pictures, I would like more recipes for the money.

That said, even at this price, I GLADLY RECOMMEND this book.

3-0 out of 5 stars The Egg, Dairy and Nut Free Cookbook
To be honest I have only used one recipe from this cookbook and it didn't turn out all that yummy or well. I just don't find the recipes to seem that tasty or appealing. I would probably buy it again but I don't know if I would reccomend it.

5-0 out of 5 stars Really great book - Thoroughly recommend!
My daughter, who is now four, has had egg, nut and dairy allergies since birth.Like the authors son, she was also allergic to my breast milk.I thought I knew it all when it came to providing meals/baking for her, but when I saw this book for sale I thought I'd buy it for interest and in a strange way to support the author who's been through what we have been (are are going) through.Well, I am really impressed and am very grateful to the author for writing it.I have tried 2 recipes which came out fabulously (blueberry muffins and banana muffins) and have the carrot cake baking in the oven while I type!! It look and smells like a success already!Other recipes I've tried for banana muffins have turned out a stodgy gooey lump, but the authors recipe for these were really lovely.Light, distinct pieces of banana and with a really pleasing golden crust which can be quite hard to achieve without eggs or dairy!I'm very happy and would easily serve these up to non-allergic visitors without needing to explain why they aren't quite up to scratch compared to a 'normal' muffin! The recipes use simple, storecupboard ingredients, and apart from a few recipes which use products not available in New Zealand (for eg milk-free whipped topping) I shall be working my way thru this book!A big thank to the author for this one!! ...
