The last sentence in the introduction says something along the lines of "now let's cook like our ancestors!" I'd estimate half the recipes in here call for refridgerated dough or boxed cake mix. Two things I don't eat and one I can't take with me to camp! The small section on breads was good as those were from scratch but be prepared for lots of mixes, cannded items and more convenience cooking than traditional ancestory fare.

Many of the recipes were "brown this, add that on top" which I could figure out myself. I bought this because the mixed reviews were unconclusive. The three stars come from the begining care guide and the bread section. Almost all the rest of the book is "meh" at best.

While the book has recipies, that is not the focus of this book.More than half the book is teaching you about the dutch oven and how to use it.Then, the recipies take you further by teaching you as you go.If you want recipies -- forget it.If you want to learn how to select, care for, and how to cook in a dutch over -- this is great!

this book spends too much time on history and stories. beginners need to know how to determine the temperature of the oven. advanced cooks may know how many coals to put on and under but charcoal is better to learn with.
twelve chapters of history and differances of cast iron and aluminum is too drawn out. the final blow is when there are only 19 recipes and most do not appeal to me.

I had thought this was a great book for learning how to use Dutch Ovens for cooking. Lots of good general info and many nice pics. But, when it comes to the recipes I just don't get how the author can get them so screwed up. As I am new to Dutch Oven cooking I followed the recipes and cooking times precisely. I just wish the author had taken the time to take each recipe and follow it as per the directions to re-test the directions. Many of the cooking times are just plan screwed up and incorrect. As an example, there is no way in this world that the 1 hr cooking time for the sausage and sauerkraut recipe is anywhere near close to correct. Being new, I followed this literally and found that 1 hr is totally inadequate to get the dish to cook thoroughly. Tonite, I am trying the Big Woods Chichen recipe. One hour is completely inadequate for cooking. I am now trying to get the recipe to cook at 2 hrs. I'm sure my rice will be completely overcooked when the chicken is finally done. I am using a Viking professional stove which has been tested and calibrated and am also using a Lodge Dutch oven. Please don't waste your money on this book. It looks good but when you follow the recipes to the letter the results are poor and very disappointing!!!!!!!1

This book has just saved me from worrying about gifts for my friends and relatives who camp or hunt. I plan on giving this book to many friends. The book is a great mix of history of the dutch ovens and the food cooked in them. I find it well written from the non-expert's view and would make a good book to introduce people to dutch oven cooking.

My family uses this cookbook all the time.When we started camping we bought a dutch oven and a cookbook to use with it, though I've found any recipe can be used in a dutch oven- because its an oven.The cookbook as tasty, unique recipes and bonus- most of them are very easy.The desserts are great and we've met many fellow campers while sharing our desserts.I liked the book so much I got one for the in-laws.

I teach a Dutch Oven class and this is my favorite book.I often purchase it to give as a door prize to someone.You can tell the recipes are tested and true.Its a great book, great for a beginner or someone well learned in the 'Dutch Oven Way'who is looking for new recipes.

I love camping and eating by the fire and was looking for a good book on dutch oven cooking.This book is not it.
The back cover states "Woodruff perfected these recipes ... for more than 60 years as a scoutmaster ..."
That period is 1929 to 1989, the publishing date.
By today's standards, these recipes are dated.My son is a scout, and I have been on a number of scout camping trips - and believe me scouts mostly need simple meals to prepare.But Woody is too much into canned veggies, soups, and packaged mixes.You have to look long and hard to find a recipe in this book that uses fresh ingredients.
I suspect that if Woody were alive today, given his obvious commitment to Scouting, he would update most of his recipes to reflect more of today's thinking about healthy eating and fresh food. ... Read more

I wasn't expecting what I got when I ordered this - but I sure love what I got.This book defines a patented method of cooking - who knew you could patent a cooking method?And boy, is it ever a good one.Put the food and liquid in the Dutch oven in the order listed, put on the lid, put it in a hot oven, and Voila!In around 40 minutes, give or take, you have a complete dinner for two.I was really glad that the recipes make this small portion since I'm a household of one, so I get dinner plus leftovers for another meal, but you can easily increase the recipes by using a bigger Dutch oven, multiplying the ingredients, and increasing the cooking time a bit.You can even prepare the pot ahead of time, keep it in the fridge, and put it in the oven when you get home from wherever you've been.Forgot to thaw that chicken or those pork chops?Frozen food is just fine.Want to use fish or shrimp?Go right ahead.Tofu?Sure, why not.Lots of healthy grains too.Amazing flexibility here.
The first part of the book explains the cooking method, the whys and wherefores of different kinds of Dutch ovens, the basic food stuffs you can use, and the room for variations.You are encourged to get familiar with the method and then branch out on your own, making dinners of your own choosing using the basic principles of the method.I highly recommend this book to those who have just enough time to throw stuff in a pot and get it in the oven fast.You have 40 minutes or so to do other stuff while it cooks, then sit down to a nutritionally well rounded and tasty dinner.Does it get any easier to make it yourself from fresh, healthy ingredients?I don't think so.Love this book!

5-0 out of 5 stars Perfect for those who can't cook a good meal if their life depended on it
I want to start out by saying that I am a mediocre cook at best.I am the type that needs to follow a recipe word for word, and even then my meals rarely turn out fantastic.

Not with this book!I've had it for over a month now, and now well over half of my meals are made using it.Most recipes are really good. I say most, because some are really quite bland, but even then it was no worse than many of my former 'quick meals' I use to make.My former baked chicken, rice, and a veggie is right on par with the frozen chicken meal she has, and it doesn't get any worse than that!

What I really love about this cookbook:

- Everything is healthy
- You can cook with frozen vegetables and meats
- It's easy to add a variety of foods you wouldn't normally use
- Vegetables turn out crisp, meats turn out tender
- Rice used in recipes turns out PERFECT and soooo tasty
- Foods don't mix flavors, but end up complimenting each other very very well.
- My Husband now eats second helpings of vegetables.Sometimes he even cleans out the pot.

Notes:

- some of your food may get a little browned, especially rice.I don't mind it, but I know some people wouldn't like that. If you don't like it, adjust your time.

- You don't need to double up your recipes to use the 5qt.Just take a few minutes off the total cooking time. I cook my meals 3-5 minutes less than she suggests, depending on the ingredients.You'll get a feel for it during your first few attempts.

- Most recipes could use more salt.Usually when she says to sprinkle salt and pepper, I end up using about a tablespoon.

- Many of the recipes call for half of a certain vegetable.Half a pepper, half a zucchini... If its only one vegetable like that in a recipe, I generally put the whole thing in if I know I'm not planning to use it in the future.Better than letting it rot in my fridge, and it seems to have no effect on the quality of the meal.

My Favorite Recipes

- Glorious Macaroni and Cheese (make sure to use a strong flavored cheese)
- Fiesta Steak (sooo flavorful!)
- Honey and Spice Pork (can be a little overpowering for some people)
- Pacific Island Seafood (My husband raved about this one)
- Ed's New England Fish Chowder (DON'T add extra salt)
- Dill Salmon (Used fresh salmon, turned out spectacular)
- Rosemary Chicken (I use more rosemary than recommended)


All in all, this book has saved me not only time, but stopped us from eating out as much which of course saves us money.It's healthy, and it really doesn't hurt that I'm not buying Hamburger Helpless anymore!I actually get excited when I start my grocery list, because I can actually cook these meals. I know that my husband and I are eating so much better now than we were before.

Easy, nutritious,delicious (yes, delicious and nutritious) recipes. Iam having difficulty finding a 2 quart dutch oven though.I found a 5 qt. at Target for only $30.The only 2 qt ones I've found are on the internet for $125 and up. So I have to double the recipes and have the family over for dinner.

Purchased this book to go with the Lodge 6 quart Dutch Oven and Le Creuset Stainless Steel knob that I purchased through Amazon.

PROS:The whole idea is awesome because it produces easy, quick and very healthy food in one big pot.If you are an athlete or watching your weight these dishes are a great way to get a variety of food groups with very little added fat.We do a lot of running and these dishes provide good protein, carbs and nutrients that we need.Making the meals is almost ridiculously easy and the clean up is also a snap because it is just the one pot.(Quick tip on cleaning enameled cast iron pots - clean while they are still a little warm, it seems to prevent teh food from getting too stuck on)

CONS:The down side is that the flavor is very light and seems to vanish in the finished product.She also uses some food items that can be hard to find or very expensive.My kids (9 and 3 years old) didn't really care for the food as it did have some different stuff in it - if you kids are adventurous when it comes to food it will be OK but if they are not they may not care for quite a few of the dishes.

Overall - good book with a great process, just may need to make dishes a couple times to get seasoning the way you like it

I really liked the concept of the recipes in this book, but I have tried about 6 and only one of them came out well.Too often, the ingredients are not evenly cooked -- some under and some overcooked.I think many of the recipes were not tested properly.I would really like to find out from other readers what book they think is best for using the dutch oven to make one-pot recipes.It's a great idea, but this book doesn't have it worked out. ... Bought this book hoping to get a little more info on dutch oven cooking. I agree with the others it needs a coal breakdown for temps. Some recipes gave temps so if you know the breakdown your okay.

Most of the recipes and coal breakdowns can be found on the internet anyhow.

I will admit to being surprised when I got this at how small the book is, but its full of info and perfect for taking camping. I agree with others, there is no instructions on how many coals to use or for placement, but once you have used a DO a few times, it all becomes second nature.

I use mine one the stove or in the oven. We don't camp often but I use my DO at least twice a week. With a recipe that needs a few hours to cook, I make it in the backyard on a charcoal BBQ'er and it works great. I have had no problems at all figuring out cook times and temps.

Picked this up at a local half priced books store. 5 star rating for the Braised Beef and Vegetable (aka Pot Roast) recipe alone. I have a 3 1/2 qt pot so I had to half the recipe but done right this has become a sunday standard for entire whole family (including a picky 9 yr old eater). I also recently modifed the dish by replacing the chuck roast with chicken thighs and legs, using white wine, white balsamic, and chicken stock, with spectacular results. Like some other reviews have stated this book is built 100% for a ceramic dutch oven (le creuset); that being said, if you have said dutch oven and can find this book used, buy it - you won't be disappointed.

This book offers easy and interesting ways to use the Dutch oven in your kichen to bake, broil, steam, deep-fry, saute, braise, and roast.Recipes run the gamut from great pastas, to yummy soups and stews, classic dishes, and some interesting variations using seafood, meats, poultry, and delicious vegetarian ingredients.It is a great book for really utilizing and using a great kitchen cooking vessel that no home should be without.

While the recipies may lean more to Le Creuset dutch ovens used at home, all of them can certainly be done in the old fashioned DO over charcoal. a few months ago i got on this cast iron kick,bought a couple skillets and a pair of dutch ovens and all the tools and was ready to be a camp cook, only problem was, I had no dutch oven recipes. I read a few reviews and decided that experience was the best teacher and Cee Dub seemed to fit the bill. I've gotta tell ya, ol Cee Dub puts it all together in a very easily understood cookbook that explains things in great detail, not to mention that the best parts may well be the stories he shares. if you want an education on how to cook with a DO, this book is the real deal. a word to the wise, dont buy junk iron, LODGE is the best of the best, bar none, remember, you're only going to buy it once so you might as well have the best.

The follow up of the first book is based on the same success recipe - easy to prepare, detailed cooking recipes for Dutch Oven's and entertained with amusing and entertaining Tall Tales.
I own both "Cee Dub's and other Camp Cookin'" books and the second book is not a refreshing of the first book, the recipes are different and it seems that Cee Dub is full of Tall Tales to make this cookbook an outdoor story novel.
This 2nd book is also like the 1st one highly recommended for lovers of outdoor and especially Dutch Oven cooking lovers.
I recently bought my second Duch Oven to get deeper into the described secrets of Duch Oven cooking.

This is fun cookbook to simply read.It has some very interesting information about old-time cooking, as well as wonderful recipes.It also has a miscellaneous section which has some fascinating recipes that are probably there more to be read than tried in modern times.Even if you never make a single recipe from this book (but you should!), it's a good read.

I've enjoyed everything I've made from it so far.

This is a wonderful cookbook.It made me very nostolgic for my grandmother's upstate NY kitchen.I agree with the earlier reviewer that the recipes are nowhere as specific as those in more modern cookbooks.However that's not a detraction to me:they look just like the ones on my grandmother's recipe cards!There are indeed real gems in this collection and overall it's a good read.

This book is a reprint of the authors' _Mennonite Community Cookbook_ ... Every single page is identical, word for word (just a different cover, title, and typeface) - which to me constitutes gross misrepresentation since I couldn't find that mentioned anywhere in the book, and I obviously wouldn't knowingly have ordered a duplicate copy.However, if you don't have the earlier book, you will love it.(The reason I ordered it was because I like the original book so much, and was therefore eager to see a seemingly new title attributed to them.)
It is a compilation of recipes culled from Mennonites.Since the original book was written in 1950, the directions are nowhere near as explicit as they would be today -- and there are very few "warm, fuzzy" notes prefacing recipes, so you can't tell if something was included because it is quick and easy, cheap, uses readily available ingreadients (which may be expensive today and hard for you to locate) or because it is incredibly delicious.But the gems in the collection make it well worth owning, and I love the book.My one and only complaint is that this edition is not marked as a reprint of the original.Once again, if you don't already own the original, this one is lovely.

If you, or anyone else in your family are converts to Cast Iron Cooking, this is a great reference to have, in my opinion.It is of help to me, as I recently got rid of all my "non-stick" and "non-magnetic" cookwareand replaced much of it with "Lodge Logic", Cast Iron Cookware.And, as more and more people convert over to "Induction Cooking" (as, I also, have), I believe cast iron cooking, will increasingly become more popular, just as it was in the past.

The so-called author clearly did a lot of cut and past to create the book for the Dummies series. She clearly is not an expert on the topic. On page 38 there is an incredibly ignorant and factually wrong paragraph about what oil to use for seasoning the pans (to make them non-stick.) Not only does she diss the oil that has been used for centuries to season such pans (lard) but she then recommends what is probably the very worse material, shortening, specifically Crisco. The only way I can believe someone would write such an ignorant and blatantly wrong paragraph is if they were getting paid by Crisco.

The section in Chapter 4 on cleaning old pans has several short comings. The use of vinegar was not mentioned, the used of edible oil and salt to gently scoure was not mentioned, and the topic of cleaning old pans with electrolysis was completely ignored though it is the most gentle, thorough and least labor intensive.

The author may indeed be a writer and a cook but she does not know diddly squat about how to take care of cast iron cookware.

Being fairly new to this wonderful world of cast iron, I needed all the help I could get, and this book gives you all the help you need. I had been desperate to find ways to clean my old cast iron, and chapt. 3 was right on the money. It was worth buying the book for that chapter alone. I also found out how cast iron is made and also that you really need to search the backround of the company that you are purchasing your cast iron from. Many companies may have names that sound like they are made in the USA, but after checking, they aren't. The problem with this is the contents of the cast iron are not regulated outside the U.S. as stringently as they are here. What I'm trying to say is, you really don't know what you may be eating out of. I am returning an order after finding my item was made in China. It took almost an hour on line to find that info out. It was well hidden. I am now strictly sticking to Lodge Logic. Great products, and a regulated American company.

As a long time devotee to camp cooking, I really appreciate this book.Dutch oven cooking, or one pot dinners are as staple an item on any camping trip as ghost stories around the fire. As much as camp fire dinners over the years have evolved into some of my best meals ever, I will admit that most cookbooks and recipes shared around the fire tend to be the same old soups and stews.This book does and excellent job in providing some diversity to the tried and true meat and potato dishes.The ones I have tried so far have been delicious indeed. And as far as cookbooks go, this one is very reasonably priced as well. My only reason for taking off a star is I really could have done without so much of the preliminaries at the beginning that are not exactly boring, but definitely in my opinion book filler.A short introduction and a few more recipes added instead of the history and conditioning of the dutch oven would have made it a five star book.Still however as cookbooks of this variety go, this is one of the best as well as diverse I have encountered.Recommended...

This book is as big as your hand. This little size is good for quick review of recipes when you are not in your own kitchen cause I don't think I'll bring a big and thick book for outdoor cooking. concise recipes are also wonderful. I don't want to spend a time to read a long recipes when your friends are starving.

I'm not sure if this book has a lot of typos. However, recipe for corn bread on page 37, '3 TABLE SPOONS baking power' looks like a typo for '3 TEA SPOONS baking power'

Dutch Ovens are superior for their ability to transform common food into something exquisite. This book has a few recipes that exploit on that quality, but, for the most part, the recipes in this book could be made in any pot in the kitchen.
The ones I tried were very good, however I was hoping for more that would make the most out of what a Dutch Oven does best.

The photographer who created the cover should win a prize . . . It's beautiful . . . the recipes not so much. I have returned this book because the recipes were simply not my cup of tea. When I buy a new cookbook, the first thing I do is page through every page, attaching "flags" to those recipes that sound good to me. There were no flags when I finished going through this book! Although less classy looking, I would recommend instead "Cooking the Dutch Oven Way" by Woody Woodruff. .Cooking the Dutch Oven Way Although the cover gives the impression that it is meant strictly for outdoor cooking, the recipes all include oven temperatures and can be made in your kitchen. and what's more, the ingredients are simple items you'll find at your local grocery store or in your cupboard. You won't have to be heading for a specialty market to find what you need. . . and the recipes sound yummy. I can's wait to try them . . . and it won't be hard - I have almost every page flagged!

This is an excellent book for those starting out in "D.O." cooking because unlike other books, it actually explains how to set the temperature -- i.e. how many briquets to use and where to place them.And, you can easily copy and laminate the recipes you want to use in camp thanks to the handy binder format.There are books out there with better recipes (sorry, recipes calling for Sprite are scary), but the reality is once you know HOW to cook with a DO, you can pretty much use any of your favorite recipes.i recently picked up "Classic Homemade Casseroles" at a used book store; it has more tempting ideas than this book.

Overall, I think that this is a great cookbook.It's in a great 3-ring plastic binder that will stay open while you're cookin', and you can wipe off just about any "grahdoo" that you splatter on it.There are tons of recipes in it, but they're just not what I had in mind.I'm from Texas, and I know that most of the folks who wrote these recipes are from Utah and thereabouts.I guess they eat differently than I.Most of these recipes are modern dishes that you'd find in the kitchen, adapted for dutch ovens.But I was lookin' for more backwoods, down-home, stick-to-yer-ribs type grub.I'd rather have 20 good recipes like that.Another thing is that there's not much in the book about cookin' over an open fire, which I prefer because it's more authentic.Anyway, to each his own.Coincidentally, I'm still lookin'.

This book has very good information on temperature control.After purchasing several books on Dutch Oven cooking this one gave the best descriptions on temperature control methods. While I have yet to put the actual recipes into practice the emphasis placed on ensuring the fledgling DO cook's first experiments aren't disasters are appreciated.
