Home Food, Nutrition and Health Food, Nutrition and Health programming within Lincoln University Cooperative Extension can be divided into three broad areas: Nutrition education of food stamp recipients; Food safety education in two distinct programs; and general nutrition and health programming statewide. A description and evaluation of each follows. This project is being conducted with the assistance of a Food Stamp Nutrition Education Program (FSNEP) grant from USDA/FNS. LUCE and the State Specialist oversee this program in two sites: St. Louis City and the Southeast Missouri office in Lilbourn. In St. Louis City, we employ two nutrition paraprofessionals to conduct nutrition education with groups of senior citizens in low income group residential sites around the city. One paraprofessional is also conducting some home visits. The Southeast Missouri office oversees six nutrition paraprofessionals, one in each of six Bootheel counties Dunklin, Mississippi, New Madrid, Pemiscot, Scott, and Stoddard Counties. These paraprofessionals conduct home visits and also work with groups of senior citizens, especially with grandparents providing child care for their grand children. Some of the paraprofessionals work with youth in LUCEs Kids Beat program, as well. In addition paraprofessionals in both sites attend health fairs to provide information to others who might want to enroll in the program.
