The Potjie pot however dates back to the iron age when man learned to cast iron into vessels of different shapes for a variety of purposes. The pots during this time also developed a lot of mystery and romance due to the fact that they were very popular amongst the witches and druids of the time, who used the pots for their respective rituals and ceremonies. The Potjies also bring to mind cannibals and the name "Missionary pots" which they are often called.

Most folks limit the Metis to Canada and some parts of Northern United States to describe people of mixed North American Indian and Indo-European descent. The term 'metis' is a French term that refers to a person of half-breed, mongrel, cross-bred, mestizo or metif blood. I used the term 'Metis' as a generic term to refer to a distinct culture for all those people who are born into it or are adopted into this tradition. Biological metis-sage by itself does not determine a person's social, ethnic or political identity. Canadian 'common law' based on Indian tradition suggests those adopted into a culture have equal rights and responsibilities of those within that culture.

Extractions: GREATER LONDON by Rosemary Parke London is cosmopolitan, the capital of the nation, political centre of the Commonwealth and one of the world's leading centres for trade, banking and commerce. People from around the world, particularly from former and existing Commonwealth nations and countries within the European Union, have made the city their home. Thousands from all over England, Scotland, Wales and Ireland continue to converge here in search of their proverbial fortunes and of course an essential core of true Londoners remains - those cockneys born within the sound of Bow Bells, the chimes of the church of Mary-le-Bow, which called Dick Whittington back to the City where he eventually prospered and rose to become Lord Mayor. As befits such an important and international city, anything and everything can be found in London, particularly with regard to food and drink. There is certainly no shortage of foods from outside of Britain. Londoners enjoy a staggering choice of foodstuffs to choose from. Within Britain, too, the very best produce from the provinces is sent to the capital. Fish from Cornwall or the west coast of Scotland, vegetables and fruit from market gardens in Evesham or Kent, spring lamb from Wales or prime beef from Aberdeen, oak-smoked kippers, Scottish salmon or traditionally-cured hams from Suffolk or Cumberland - all are often easier to come by in London than in their own locality!

Extractions: 7. CULTURES 7.1 General Functions of Cheese Cultures Lactic acid bacteria and other microorganisms are present as 'contaminants' in cheese milk and further environmental contamination takes place during cheese manufacture. Provided the milk is not chilled, it is possible to make cheese without any additional cultures, but normal practice is to add domestic cultures for the manufacture of cheese from both raw and pasteurized milk. Culture, then, refers to prepared inocula of bacteria, yeast and moulds which are added to cheese milk and cheese. In the broadest terms cultures have two purposes in cheese making: (1) to develop acidity; and (2) to promote ripening. Lactic acid cultures contribute to both of these functions, while numerous special or secondary cultures are added to help with the second function. Development of Acidity Raw milk at warm temperature will support a variety of micro-organisms in succession as the pH changes over time (see illustration in Figure 7.1

Interracial Marriage Generally, mixed marriages are opposed to by both sides of the mix. Intercultural and interracial marriages are rejected mainly because of ethnocentric affiliation to one's cultural and racial background. Every racial group considers itself superior to other groups just as every culture deems itself as having a better ways of life than other cultures. Historically, there are three significant factors that influence personality development which in turn, influences the success or failure of inter-cultural and inter-racial marriages. The first is human nature and those traits which make all human beings similar all over the world. The second is unique experiences which mold individuals differently making even siblings (including identical twins) different from one another. The third reason is cultural environments which make one group of people different from another group on a social level. This third reason, cultural environments, is the most influential factor that can shape a person's thoughts, actions and personalities. In a culturally-mixed marriage, when the honeymoon is over, cultural baggage begins to clash on some level even though the two individuals may still get along. It is almost impossible to externalize a life-time of internalization of a person's original culture.

Extractions: As it is popularly described, New Orleans food is a product of varied cultures, among them Native American, French, Spanish and African, who mixed and mingled, improvised and refined a culture and cuisine that is truly unique. Creoles were named for the offsprings of French and Spanish aristocrats who settled on the banks of the Mississipi River 265 years ago and the rich culture they created. That intermingling of many unique and diverse cultures who willingly contributed their cooking styles, recipes and talent made up the distinct flavors of Creole cuisine. Elegant in preparation and service, Creole-cooking uses sophisticated sauces and ingredients reminiscent of the urban style of Louisiana cooking. Cajuns, on the other hand, were the children of exiled French refugees who settled in New Orleans in the 1760s. Mostly of rural stock, these early settlers in America's bayou country were well versed in the art of survival and lives close to the land. Their farm style method of cooking made use of wild game, seafood, wild vegetation and herbs, which are combined, in the black iron pot of the Cajuns.

Extractions: The material culture of a people is more-or-less synonymous with its technology. It is the persistent pattern of their material existence - how they clothed themselves, how they provided shelter, how they moved about, how they procured or produced foods, and how they utilized resources to perform the manifold of other tasks that are associated with material survival. I have divided these matters into three areas. The first tended to be shared by men, women, and children. The second tended to be the province of men; and the third tended to be the province of women. Clothing, Housing, and Transportation This basic nudity did not change in winter but the need for warmth was met by adding a cape made from rabbit skins . The cape was tied around one's neck with cordage and it was usually long enough that it hung almost to the knees. At night the cape became both blanket and bed. It was perhaps the Great Basin's most significant technological invention. It was no mere blanket of sewn skins; in fact, it was a marvelously thick and warm garment with fir on both the inside and the outside. It was the product of weaving. Rabbit skins were first cleaned, cured, and dried. When enough skins were available, each skin was cut into a single long strip, about an inch wide, just as one might cut an orange peel into a single strip. When the rabbits skins were cut into strips , they were then twisted into what amounted to a thick "thread", fir side out, and woven into a fabric on a primitive loom. The product was very durable and must have been quite warm. (Wheat, 74-81
