Extractions: Pose Challenges for "New Economy" Restaurateurs NEW YORK, September 26 In a recent nationwide survey, 43% of all restaurants responding noted a decrease in business since September 11, 2001, with nearly one-fifth reporting a decline of 20% or more. The survey , commissioned by Women Chefs and Restaurateurs (WCR) for its membership, was the impetus for The Restaurant Summit, a symposium presented by The French Culinary Institute, in conjunction with the WCR and Cornell University. The half-day event featured an industry overview by Professor Chekitan Dev, Cornell University's award-winning Associate Professor of Strategic Marketing at the School of Hotel Administration. Michael Batterberry of Food Arts Magazine amplified survey results and moderated a panel discussion with celebrated restaurateurs Lidia Bastanich, Emily Luchetti, Anne Quatrano, and Deann Bayless. "If this is where we are in the world today, how can we use it to our best advantage?" asked Ann Cooper, president of the WCR, in opening remarks. Dorothy Cann Hamilton, Founder and CEO of The French Culinary Institute, explained that The FCI has responded to the industry crisis by introducing "Essentials of Restaurant Management," a 90-hour course premiering in January, 2003. Designed to support greater productivity for new or existing restaurants, the course will be taught jointly by The FCI, Cornell University's School of Hotel Administration, highly successful restaurateurs (Union Square Café; TriBeCa Grill) and experts in restaurant architecture, finance, and law.
