Extractions: Serving nutritious meals through careful meal planning is an obligation of any 4-H camp, simply because of the effect that good nutrition has on good health. The person responsible for planning meals should understand basic nutritional needs, food values, and the most current USDA Dietary Guidelines. In addition, this person should understand children and their appetites, likes, and dislikes. It does no good to serve a nutritional meal which children do not like and w-ill not eat. That need not happen because of the thousands of ways nutritious foods can be prepared. A teaching food service Beyond serving nutritious meals, it is also the obligation of the 4-H camp to help children learn about the food value of the meals they eat. To accomplish this goal it will be important to have a staff that knows about nutrition, can introduce food discussion at meals and show by example that eating a variety of foods is healthful. Well-trained camp staff can help children understand relationships between what they eat and how they feel. In addition, they can help campers develop a healthy curiosity about the role of food in different cultures. Skillful staff will find ways to help children learn about nutrition in many more places than the camp dining hall at all different times throughout the camp program.

As reported in the March/April 1999 issue of Fiery Foods Magazine Tortilla Chip Breakdown Sales of tortilla chips rose by 7.7 percent in 1997, according to a report by the Snack Food Association. This was attributed to the introduction of new flavors, as well as products made with the fat substitute olestra. In the first six months, olestra-containing Wow! Doritos, by Frito Lay brought $45.8 million in sales, according to Information Resources, Inc. Innovative chip flavors included salsa and cream cheese, and salsa verde Baked Doritos; as well as lime and chili Fritos. Several hot and spicy offerings included Cajun, chili, and jalapeño and lime. Other offerings were cheddar and sour cream, lime and chili, and spicy black bean on blue corn. "While more than 61 percent of the tortilla chips sold were regular flavor," says the report, "innovative and tasty flavors continued to complement the category-gainers. In this ranking were spicy/hot and salsa flavors, which posted 2.2 percent and 1.9 percent gains over 1996."

The bad news is that there are hundreds of different hot sauces and salsas on the market to choose from. While fiery foods may have taken off a decade ago as a trendy, quaint cottage industry, it has now grown into a category all of its own, complete with serious competition, and what some believe is becoming a glut of product. With new hot sauce and salsa manufacturers and products popping up every day, diversification may be the answer to thriving or even staying alive in what some say is becoming a overcrowded marketplace. So you ask, what else will work with my habaneros and jalapeños? Think about all the nibbling that goes on in between meals. With an estimated $42 billion plus spent on snack foods in 1996, America's penchant for sugar and snacking may translate to sweet success for the retailers, manufacturers, and distributors who put their own spicy spin on this category.

Extractions: Did you know middle aged Americans face a 90% chance of developing high blood pressure some time in their lifetime? High blood pressure, or hypertension, is defined as a blood pressure reading of 140/90 or higher. It is estimated that nearly 50 million Americans, one in four adults and half of those over 60, have high blood pressure. Yet, less than one-third of those with high blood pressure have it under control. When not controlled, high blood pressure significantly increases the risk of heart attack, stroke and heart failure. Chances are, the only diet advice commonly heard for controlling blood pressure is to cut back on salt. Actually, salt is just part of the equation, instead there are many dietary and lifestyle factors that have an affect on blood pressure. Over four years ago, there was a comprehensive study reviewing dietary interventions and high blood pressure.

Extractions: Eat Smart, Play Hard Dec. 2001 The United States Department of Agriculture Food and Nutrition Service has created a new "Eat Smart. Play Hard" Campaign. A cartoon character named " Power Panther" encourages students and families to do the following: These messages have been endorsed by national organizations including the American School Food Service Association, the American Dietetic Association, and the National Association of Women, Infants and Children Directors. Why has USDA developed this campaign? Mainly because of the alarming number of students who are at risk due to poor nutritional choices, lack of physical activity, and environmental influences. Overweight young people, ages 6-17, make up about 12.5 percent of the population. Arkansas ranks fifth highest in this obesity ranking. Only 19 percent of girls, ages 9-19 meet the calcium allowance of 1300 milligrams a day. Iron deficiencies are also widespread among children. Think about the effect of these realities 1) Consuming high-calorie foods and drinks causes obesity. Obesity can create psychological stress, poor self-images, and potential for peer discrimination. 2) Calcium is needed for building and maintaining strong bones. Deficiencies create the potential for decreased motor skills and physical activity that would burn calories to maintain weight. 3) Iron deficiencies reduce resistance to infection. In summary poor nutrition can impact academic performance, emotional adjustment, physical and motor development and skills, behavior, and school attendance. What can we do as a community to overcome these deficiencies and help children become "healthy students today and healthy leaders tomorrow?"
