(Peanut Butter Stuffed Wheat Ball) 1 can chick peas
½ cup Cream of Wheat or farina
2 cups fine bulghour
1 cup water
salt, pepper to taste Filling:
6 med. onions
1/3 cup water
1 cup chopped parsley
1 tbsp. crushed basil 1 lb. peanut butter ½ can taheen Kufta shell: Blend chick peas in blender or put through the fine blade of a meat grinder. Put chick peas, Cream of Wheat or farina and bulghour, salt and pepper into a bowl, add the water and set aside for 30 minutes. Chop onions. Put in a two quart saucepan, add 1/3 water and cook on a medium flame until onions are limp but not browned. Strain onions and set aside to cool. Reserve water for the kufta mixture. Add parsley, basil, peanut butter and taheen to cooled onions. Mix and fill kufta shells as follows: Knead the kufta mixture. Wet your hands from time to time as you knead the mixture. As you knead you will see the mixture will hold together and feel firm. Continue kneading for 12 to 15 minutes.

    (Stuffed grape leaves)
    Prepare all ingredients beforehand and allow at least 2½ hours.
    Rice Filling
    1 cup rice, extra long grain
    ½ cup pure olive oil
    ¼ cup veg. oil
    2½ lbs. onions (chopped - equiv. to 5 heaping cups)
    1 tbsp. salt
    ¼ tsp. black pepper
    ¼ tsp. red pepper 1½ cups water ½ cup fresh lemon juice squeezed and strained 1 tbsp. pignoli nuts ½ cup chopped fresh parsley 1 tbsp. dried dill or (2 tbsp. fresh chopped) Heat oil in a 4-quart saucepan (stainless steel). When piece of onion sizzles then add pignoli nuts and all of onion. Mix well, then stir in salt, black and red pepper. Cook over medium heat stirring all the time. Do not brown onion. Cook until soft or until color changes from pure white to off-white. Now add washed and drained rice. Mix well. Add chopped parsley and dill mixing well with ingredients in pan. Add 1½ cups water and cook approximately 15 minutes, stirring often so bottom and sides won't stick to pan or burn. Now add lemon juice. Mix well. Remove from heat. Empty ingredients into open pan. Line bottom of another 4-quart stainless steel pan with grape leaves. (This help. prevent burning.)

    Armenia in general is a harsh, cold and mountainous land. Russia, the Ukraine and Georgia are to the North, Azerbajian on the East, Iran, Syria and Iraq on the South and Turkey on the West. Armenia has been occupied and divided by Russia, Greece, Turkey and Persia and thus has a cuisine which is complicated by name and ingredients. The fact that Armenia was the first Christian nation on earth and completely surrounded by Moslems and nomadic tribes affected the diet of it's people not only as related to farming methods but also as to religious belief. An agrarian civilization spanning 2600 years, Armenia was the crossroads of the world between East and West, "The silk road". It's food reflects that fact by similarities in recipes from Europe to India. The meat staple of the country was lamb and to a lesser extent chicken and beef. No pork was used in the Armenian diet due to biblical belief that only animals that chewed their cud were to be eaten. Seafood was mainly lake or river fish and sturgeon and it's caviar. No salt water ports border modern Armenia. Vegetables such as squash, onions, tomatoes, garlic, cabbage, okra, green beans, peppers, cucumbers and eggplant were used quite extensively during the summer growing season. Armenians love vegetables and were very adept at roasting them. Eggplant, peppers, squash, garlic and onions were among their favorites. During the cold winter months the staples were dried fruits, dry preserved olives, nuts, beans, rice and wheat. Meat was preserved like a confit. Lamb was cooked in it's own fat and preserved without refrigeration beneath a thick layer of solidified fat. Called kavourma, the homemaker would reach into a crock of preserved lamb and remove a portion enough for a meal. The meat was so well cooked that it fell off the bone. The fat surface layer was replaced until another portion was needed.

    Once upon a time, a young Armenian girl named Shushan, came of age and was ready to throw her own dinner party. She asked her mother, Azniv, to help her with the preparation, since Shushan knew very little about cooking. She too wanted to be a part of a traditional Armenian family, where good homemade Armenian food was tradition.
    The preparation for the party was not very tedious or difficult. In fact, it was quite simple because Shushan's mother did all of the cooking. With this in mind, Shushanís mother started out by preparing the cheese borag:
    1 lb. filo dough or puff dough, 1 lb. Jack cheese, grated
    1 bunch of parsley, chopped , 2 eggs
    1 lb. butter or margarine, melted

    After Azniv combined the cheese, parsley and eggs, she buttered the first sheet of dough and folded it as directed. She added one large spoonful of the cheese mixture to the dough, folded into triangles and placed the item on a cookie sheet. She baked the appetizer at 350 degrees for 15-20 minutes.
    "What would a nice dinner be without hommos", thought Shushan's mother.

    Yalanchi, Kufta, Paklava ... as Armenians we are all familiar with these culinary delights, however, not too many college students spend as much time preparing these dishes as they do enjoying them.
    While the weekend consisted largely of the preparation of various Armenian dishes, Professor Der Mugrdechian also included a discussion on the history and tradition that go along with these delicacies. It is no secret that Armenians have enjoyed their traditional foods for centuries, indeed, food has long been an important part of the Armenian culture. In the 5th Century B.C., the Greek historian Xenophon included in his work Anabasis, a description of the abundance of food he encountered during his travels through Armenia. As well, even the 8th Century A.D. Armenian Folk hero David of Sassoun grew strong on healthy servings of Herisah.
    Beginning with Chorag on Friday evening, students dove right into the art of Armenian cooking. By the end of the night they had successfully made and quickly consumed Valley Wraps, Cheese Borag, Kurabia and Yalanchi. Saturday morning brought the opportunity to make Kadaif, Kufta, Dolma, Pilaf, Tabbuli and Bourma. Many students felt more comfortable rolling Yalanchi and Bourma away from the watchful eye of their grandmothers. Some students had more Armenian food in the course of these two days than they will have all year. But no one was complaining. In fact mealtime seemed to be the quietest time of all throughout the weekend.
