Department of Animal Science According to the NC Department of Agriculture , "North Carolina beef cattle breeders produce approximately 500,000 calves per year." These calves may be found on any of the approximately 33,000 farms producing beef cattle for private or commercial use. To support the beef cattle industry, Extension programs here at North Carolina State University are developed with emphasis on a systems approach to our livestock operation. Our State Specialists are able to provide support for all livestock operations in conjunction with the County Agent network located in each County Extension Office. The research and educational information we can provide delivers the latest production and marketing information to maintain profitable operations.

Cattle are among the most important of farm animals. They are used for meat, milk, leather, medicine and more. Beef by-products enable us to use 99% of every beef animal. In some countries, cattle are still a main source of power for plows, carts and wagons. Cattle belong to the ox family along with bison, yak, and water buffalo. Cattle digest their food by bringing it back to the mouth from the second chamber (reticulum) of the four chambered stomach. This food is called a cud. The first stomach chamber is called the paunch.

This is the place to share information about the many Agricultural events from the 1904 World's Fair. We will take a look at the displays in the Agriculture Palace and the livestock events that took place in the Livestock Forum. World's Fairs were especially popular with rural people. The Fairs were the primary means to learn of the newest agricultural products and technologies. Major livestock exhibitions were held throughout the fair. This gave fair visitors the opportunity to see the newest breeds and the best animals within those breeds. Follow the many links below to see the various Ag events: The Agriculture Palace
Of the huge palaces built for the World's Fair, the Palace of Agriculture was the largest. It was 500 by 1600 feet in size. This means that this building covered more than 18 acres. The Livestock Forum
The livestock shows were held in the Livestock Forum south of the Agriculture Palace. Most shows were held during the fall.

    Colors in Beef Cattle
By: B. C. Allison, Livestock Specialist The price of feeder calves in today's market is influenced by their color. This is a result of the perception that color is related to performance and carcass value. This is a misconception as color alone is not even a good indication of breed in crossbred cattle. As a result of previous selection, however, most of the breeds of cattle are characterized by a basic body color or color pattern, such as spotted, solid color, blaze face or white face. It does behoove the cattle producer to understand the inheritance of color, enabling him to predict with some accuracy the color pattern of his calf crop and know how to change it. Color in beef cattle is a qualitative trait that is influenced by only a few pairs of genes, unlike the growth traits, which are quantitative and are influenced by a number of pairs of genes. It is therefore easier to breed for particular color patterns in cattle than it is to change performance traits. Each animal has two genes for basic color - one received from the dam in the egg and one received from the sire in sperm. If you know what genes the sire and dam have, you can predict what genes the calf will have.
