Health Care, Nutrition, and Goal One. ERIC Digest.
THIS DIGEST WAS CREATED BY ERIC, THE EDUCATIONAL RESOURCES INFORMATION CENTER. FOR MORE INFORMATION ABOUT ERIC, CONTACT ACCESS ERIC 1-800-LET-ERIC In April, 1993, President Clinton sent to congress the Goals 2000: Educate America Act, which embraces the objectives of Goal One of the six national education goals. Goal One states that "By the year 2000, all children in America will start school ready to learn." One of the objectives formulated to meet this goal asserts that "Children will receive the nutrition and health care needed to arrive at school with healthy minds and bodies." Problems which can affect children's later development and school readiness include lack of prenatal care, low birth weight, maternal substance abuse, malnutrition, vaccine-preventable diseases, sensory impairments, high blood lead levels, and anemia. Efforts to promote children's health and nutrition, and to prevent children's illness, include federal and state programs, and initiatives to serve preschool children in health care settings, in preschool programs, and in community settings. These efforts address prenatal care, health and nutrition of the developing child, parent education, preschool teacher education, and health and nutrition instruction for preschool children.

Testimony of Leslie Mikkelsen before the Senate Appropriations Committee, Subcommittee on Labor, Health and Human Services, Education, and Related Agencies "Improving Nutrition and Health Through Lifestyle Modifications" February 17, 2003
San Francisco, CA My name is Leslie Mikkelsen. I am Managing Director of Prevention Institute. I would like to thank you for the opportunity to be part of this very important hearing to address a serious and growing health problem in the United States. I am very enthusiastic that the Committee on Appropriations has recognized the gravity of this public health crisis and recommended significant funding to increase physical activity, improve nutrition, and reduce the prevalence of obesity and overweight. I would like to share with you my perspective, gained through my work as a nutritionist and public health practitioner, on effective measures necessary to turn around the frightening statistics. There are numerous factors which influence individual food and activity choices. Changing the overall pattern of these choices requires a multifaceted approach that addresses not only individual knowledge, motivation, and skills, but also ensures the surrounding environment supports healthy behaviors. This point was driven home for me in my work as the nutritionist for the food banks of New York City and Alameda County. An important lesson for me in this work occurred after I had led a particularly successful nutrition education session with mothers of young children, sponsored by a local community agency. The group was enthusiastic and quite interested in practical guidance about how best to nourish their children. Then lunch arrived. It consisted of a microwaved "Polish" hot dog, potato chips, cup cakes, and a fruit drink. At that moment, it was clear to me why education was only one element of the strategy to change the dietary habits of these families.

http://www.hpdp.unc.edu/nph/description.htm
September 10 - 16, 2003 This intensive 6-day course serves public health practitioners (both nutritionists and non-nutritionists) who work with populations with little or no access to health care services. Emphasis is given to nutrition interventions for low-income and minority women at increased risk for chronic diseases associated with dietary and lifestyle practices. The curriculum is designed for practitioners with a desire to learn more about planning and developing nutrition interventions at the individual, organizational, community, and policy levels. Faculty with practical and/or academic expertise in public health approaches to healthy eating will teach both behavioral and environmental nutrition interventions. The nutrition course offers an informal learning environment, an emphasis on interactive teaching, and a small group practicum applicable to challenges facing participants. Participants and faculty share meals together, and faculty are available for individual consultation sessions. Days are jam-packed with activity but course participants are housed, fed, and learn at the extraordinary Paul J Rizzo Conference Center in Chapel Hill, NC. Course sessions include:
  • Hot topics in nutrition science Socio-ecologic and public health practice models applied to nutrition Needs and assets assessment - individual and community Intra- and inter-personal level behavior change Organization and community influences on diet, and strategies for change
