Rombauer ; November 1997; ISBN: 0684818701; HC) Cookbook Heaven Recipelink.com Most candy making is an art—and most candy recipes require a considerable degree of patience, time, attention, and practice to get right. Being well prepared is absolutely vital. Timing is crucial: Fudge can overcook in just the time it takes to retrieve the right spatula. Before beginning, check to make sure you have all the ingredients and equipment you need at the ready. Read through the recipe to see if there are any steps that must be done in advance, and make sure your equipment is very clean, to help avoid crystallization, also. Accurate measurements are essential in candy making. One final basic counsel: Watch the weather report. Heat and humidity can adversely affect many candies. On humid days, candy must cook longer, to a temperature at least 2 degrees higher than on dry days, and you should dip chocolates or make cooked fondant, hard candy, divinity, and any candy that requires drying time on a rack only when it is cool and dry. The Cold Water Test Most experienced candy makers use both a thermometer and the ice-cold water test. Exact temperature as measured by a thermometer is a useful guide in candy making, but a candy that will be ready at 250 degrees F one day may need to be 3 degrees higher the next. To perform the ice-cold water test, use a clean wooden spoon or a metal spoon (run under hot water to warm it) to drop a small quantity of candy syrup—less than a teaspoonful—into a small container of very cold (not ice) water. Quickly gather the syrup between your fingers. The temperature to which the sugar has been cooked can be identified by the way the syrup reacts. As the water heats and evaporates, the concentration of sugar in the syrup rises; the higher the concentration of sugar, the harder the mixture will be upon cooling. The following table lists the stages of cooking, the temperature range for each one, the visual characteristics of each, and a few of the candies that are made at that stage.

    1- 10 oz package of marshmallows, mini or regular size (4 cups total)
    5 cups Rice Krispy-type cereal, regular or chocolate Large bowl and spoon cooking spray or oil/shortening foil piece of thin cardboard scissors waxed paper plate two baggies paper felt-tipped pen an adult to help you Instructions: 1. Spray microwave-safe, large mixing bowl with cooking spray so mixture won't stick. Place marshmallows and margarine in bowl. Microwave on high for 1 minute. Mix well. 2. Microwave on high for one minute more and then stir. Be careful not to burn yourself on the hot marshmallow-margarine mix. Get an adult to help you.

    What I'd Give For a Well-Cooked...
    This is likely to be one of the most neglected sections of my website for one simple reason: the cookbooks and scribbled recipe notes are never with me when I'm finally somewhere where I can modify my webpages. So expect slowness. Cooking is another one of those things I fell into through necessity and discovered I liked. Growing up, I was a member of the TV Dinner Generation, more skilled in the use of the microwave than in putting together a good meal. Once I moved to the UK, however, I found myself having to deal with the actual ingredients that go into food - and found myself having to find a way to turn that into food. Needless to say, the learning curve is steep when faced with starvation. I'm still somewhat unadventurous - my sense of smell is somewhat lacking, which makes it hard for me to distinguish smells and tastes with any delicacy. Still, I manage. My preferred area of cooking is to make Mexican food, as they've not a clue how to do it in the UK and as a former southern California native, such food is a necessity for survival. I literally start getting the shakes and tremors after a certain period of denial if I can't find someway to sit down and make enchiladas or something similar. If I'm good at anything, it's baking. I've been experimenting a bunch, and hopefully some of the recipes I'll include here in time will pique your interest. Some of them, like the 'dive bombs' (double chocolate chunk cookies), are rather popular in Durham - I use them liberally as bribes. Oddly, those I bribe don't seem to mind...

    ** Fill frosting into a squeeze bottle - empty ketchup dispenser works well. ** A children's larger paintbrush works well for spreading frosting too. Create a frosty forest... Use ice cream cones to create a forest of evergreen trees for your winter wonderland. To make trees, slice the spearmint leaves in half so that they are half as thick. Turn cone upside down and paint frosting, covering cone well. Start at bottom and press a row of leaves into the frosting. Add more rows of leaves overlapping the rows as you move up the cone. Make a sweet scene....

    12 oz white chocolate, coarsely chopped
    14 oz can sweetened condensed milk
    1/4 c coarsely chopped peppermint candies
    DIRECTIONS:
    Butter an 8-inch square baking pan; line bottom and sides with foil allowing foil to extend over sides of pan by about 1". Butter foil. Over medium-high heat in top of double-boiler or heatproof bowl set over pot of hot water combine white chocolate and condensed milk. Cook, stirring frequently, until melted and smooth, 5 minutes. Pour mixture into pan; sprinkle candy over top. Using knife lightly swirl candy into chocolate mixture. Refrigerate until firm, about 6 hours or overnight. Cut into 1" squares, diamond shapes or rectangles. Store in refrigerator.
    Yield: 64 pieces
    COOKIE TIPS FOR BAKING SEASON:
    * If refrigerator cookie dough seems to soft to form into cylinders, don't be tempted to add more flour to stiffen it. Instead, stick the bowl of dough in the freezerfor about an hour. You'll find the dough easier to handle.
    * Cookies that have become hard can be softened if you store them for a day or so i a closed container wit half an apple.

    Gourmet Candy Apples Presented by Alisa Bangerter on October 24, 2000
    "These gourmet candy apples are a wonderful rich dessert and would make an elegant gift, Choose candy and topping? to coordinate with any holiday or special occasion. Wrap the finished apples in cellophane and tie with ribbons, raffia, holiday picks, etc. Each apple serves approximately 6-8 people. " Ingredients:

  • Large red fancy apples
  • Unwrapped caramels or homernade caramel
  • Chocolate flavored almond bark
  • Vanilla flavored almood bark
  • Method: Unwrap and melt caramels over low heat in a double boiler. Hoittemade caramel topping may also be used (see recipe below). Melt dipping chocolate and vanilla flavored almond bark in separate containers in the microwave on medium heat stirring every 30 seconds. Insert a fork into the top of an apple (at room temperature) to use as a handle while preparing, as the apple will get heavy. Spread melted caramel over 1/2 of the apple and immediately roll in, nuts or another topping of your choice. Do the same on the other side of the apple. (You will need to place apple in the freezer on a small plate for a few minutes between each layer to help set the caramel and the chocolate.) Next drizzle or spread more caramel over the entire apple and roll in a different topping. Drizzle chocolate over apple and add more toppings. Next, drizzle vanilla flavored almond bark over apple and add more toppings. Continue layers until apple has approximately I " of toppings. Apple will keep up to two weeks in the refrigerator.

    Candy Cane Cookies Presented by Alisa Bangerter on December 15, 1998
    "There is no way to describe cookies this good. " Ingredients:

  • 1 cup butter or margarine
  • 1 cup powdered sugar
  • 1 egg
  • 1 tsp. peppermint extract
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 3 cups flour
  • 1/2 tsp. liquid red food coloring
  • 1/2 cup crushed peppermint candy canes
  • 1/2 cup granulated sugar
  • semi-sweet chocolate chips or dipping chocolate, melted (opt.) Method: Cream together butter and powdered sugar. Mix in egg, peppermint extract, salt, and baking powder. Add flour. (If dough is too stiff add 1 Tbl. milk.) Divide dough into two equal parts an add red food coloring to one part. Knead in coloring until dough is bright red. Take a tsp. of the red dough and roll into a snake-like rope about 6 inches long. Make another rope the same way out of the white cough. Place the two ropes next to each other. Twist the ropes together and shape to resemble a candy cane. Pinch ends together. Place cookies on an ungreased cookie sheet. (Make each complete cookie one at a time so dough will not sit and dry out then be hard to twist together.) Bake at 375 degrees for 8-10 min. or until bottoms are lightly browned. Combine the crushed peppermint candy canes and the granulated sugar. Immediately after removing from oven, sprinkle each hot cookie with this mixture.     Well, the Christmas season is over and the tree has been decommissioned for another year. The decorations have been carefully wrapped and stored away. Things are finally getting back to normal. There's one problem though...what to do with all those candy canes? One can only enjoy so many before the thought of a peppermint stick makes you want to run! It's time for something different. It's time for Candy Cane Chiffon Pie!!! When you've finished a wonderful meal, it's sometimes best to enjoy a light dessert or a dinner mint. Why not enjoy both? This light, creamy dessert is bound to impress your family and friends. If you're like me, you'll still be entertaining long after Christmas has officially ended. Why not extend the season by using miniature candy canes to add a little holiday flair to your dessert? After all, nearly all banks and other service-oriented shops have likely piled them into your lap throughout the season why not use them? If you're feeding a crowd, you can double the ingredients and bake the pastry in a 9 X 13" baking pan instead of a small pie plate. One note of advice: Be patient!
