BROWN STOCK
Transfer to a clean pan. Add 4 quarts of water, 2 tablespoons tomato paste, bouquet garni and six peppercorns. Simmer for 3 to 4 hours, skimming often.
Ladle the stock in batches into a fine strainer over a bowl. Gently press the solids with the ladle to extract all the liquid and place in the refrigerator to cool. Lift off any fat. Summer entertaining is all about preparing meals with the least fuss possible. That's why grilling remains so popular preparation and clean-up is kept to a minimum. However, if you prefer a more elaborate presentation for your dinner party, holiday or special event, there are recipes which can be prepared in advance and then served with flair and flavor.
Slowly braised beef served with a creamy dill sauce makes a welcome change from the more traditional recipes for beef. Delicious served with crisp green vegetables and new potatoes, the meat can be prepared in advance and then warmed shortly before serving. Ratjetoe 300 grams lean hamburger
nutmeg, salt and pepper
30 grams margarine
2 chopped onions
2 cloves garlic
150 ml sour cream 150 ml stock or bouillon 750 gram new (small) potatoes 300 grams grated cheese In a skillet heat the butter and fry the beef, adding salt, pepper and nutmeg, the chopped onion and the pressed garlic clove, and separate with a fork. Grease a baking dish. Mix the sour cream and bouillon. Put a layer of potatoes in the dish, add a layer of meat, a layer of cheese and keep adding layers, finishing with a layer of potatoes. REILLY'S TUNA NOODLE CASSEROLE
3 cups uncooked elbow macaroni or 4 cups uncooked larger noodle (we use bowtie...farfalle)
Cook the macaroni until done, drain, and set aside.
one tablespoon butter
1/4 cup chopped onion
1/4 cup shredded carrot
1/4 cup chopped celery
1/4 cup chopped red pepper
Saute the onion, carrot, pepper and celery in the butter until onion is translucent and soft.
In a large bowl, mix the cooked veggies with one can of reduced-fat cheddar cheese soup (11 oz. can). Add one cup of light sour cream and 1/2 cup milk, you can use nonfat milk. Than add 1/2 cup shredded sharp cheddar cheese.
Stir in the cooked macaroni and GENTLY add two small cans or one large can tuna packed in water, drained.
Pour into a 1 1/2 quart casserole, sprinkle with another 1/2 cup shredded sharp cheddar and 1/4 cup shredded parmesan or romano cheese. Cover tightly. Here's the fun part...top with 1/2 cup of extra cheddar Goldfish crackers...not the bland ones but the extra cheesy ones..they taste like Cheese Nips. It is a cute tie-in, yes? Get it? 90's STYLE TUNA CASSEROLE
2 cans (6 to 6 1/2 oz.) water-packed tuna, drained (or 1 lb. fresh skinless, boneless tuna steaks)
2 tablespoons lemon juice (if using fresh tuna)
8 oz. wide egg noodles
4 tablespoons unsalted butter
8 oz. mushrooms, sliced
1/3 cup all-purpose flour
2 cups low-fat milk
2 tablespoons cornstarch
1 bottle (8 oz.) clam juice or 1 cup fish stock
1/4 cup dry white wine
1 teaspoon salt 1/4 teaspoon pepper 1/4 grated nutmeg 2 tablespoons snipped fresh dill or 1 teaspoon dried oregano, crumbled 3 tablespoons breadcrumbs 2. Start cooking noodles according to package directions. Meanwhile, melt 1 tablespoon butter in large skillet over medium heat. Add mushrooms and cook without stirring, 1 to 2 minutes, until browned. Stir and add 1 tablespoon water; cook 1 minute until tender. 3. Melt remaining butter in medium saucepan over medium heat. Stir in flour and cook, stirring, 1 minute. Stir in milk and bring to simmer, stirring constantly. Stir together cornstarch, clam juice, and wine. Pour into sauce, stirring constantly; add salt, pepper, and nutmeg. Add chicken; reduce heat, and simmer 15 minutes or until chicken is done, turning chicken once. Remove chicken from cooking liquid, reserving cooking liquid; cool chicken. Shred meat with two forks, and set aside. Preheat oven to 350 degrees. Heat oil in a large nonstick skillet over medium-high heat. Add 1 can of chiles and onion; saute 3 minutes or until soft. Add reserved cooking liquid, milk, Monterey Jack, cream cheese, and enchilada sauce; stir well. Stir in shredded chicken; cook 2 minutes. Remove from heat. Place 4 tortillas in the bottom of a 2-quart casserole coated with cooking spray. Spoon 2 cups chicken mixture over tortillas. Repeat layers twice, ending with chicken mixture. Sprinkle with cheddar cheese and chips. Bake at 350 degrees for 30 minutes or until thoroughly heated. Let stand 10 minutes before serving.
