In recent years, we've become more aware of the connection between diet and health, and so we're making an effort to eat more fruits and vegetables. To keep up with this trend, even die-hard burger-and-fries establishments are now offering vegetarian choices and fresh salads on their menus. This is definitely progress. Yet, when we take a close look at what's in and on our fruits and vegetables, it's obvious that, in many ways, we're undermining our efforts to stay healthy.
The aggressive use of large-scale intensive farming practices over the past several decades has left our agricultural soil depleted of minerals and beneficial microbes. This translates into lower nutrient levels in produce, reflected by a lack of flavor. My seven-year-old son loves to eat apples, but he frequently complains that they're dry and tasteless, and unfortunately he's right. I remember biting into a pear or an apple as a child and savoring its ripe, juicy sweetness. Such fullness of flavor is rarely found in fruits and vegetables today. Most produce, grown in impoverished soil, is picked before it's ripe to facilitate transport and storage. This means that even the few vitamins and minerals it does contain will never become fully bioavailable.
To make things worse, our crops are dowsed with toxic pesticides, which jeopardize the health of farmers and their families, und ultimately that of the consumer. Pesticides pollute the air, the soil, and our water supplies and, of course, the food they're sprayed on. Conventional agriculture uses thousands of pesticides; it is estimated that, worldwide, several billion pounds are applied annually. Synthetic fertilizers, too, are undermining the health of Planet Earth and its inhabitants. Every year, thousands of tons of highly soluble nitrogen fertilizer are applied, much of which ends up in our ground and surface water.

    Samsung's aptly named Intelligent Microwave Oven will cook food to exact times and temperatures with a simple swipe past its scanner. Read more in Infostructure "We've had the concept for years," said Kim Yam, who developed the unit at the Rutgers University Department of Food Science. "But recently the hardware and software just came together, and scanning technology became more affordable." The oven uses a bar code scanner to read and process information from food packages. Ideally, food manufacturers would load the bar code label with detailed nutritional, ingredient, and cooking information, Yam said. "We have to put together partnerships between the food companies and Internet companies," he said. "The technology can be applied to any food because the bar code is there already, but we'd like manufacturers to put more information onto the bar code."

    • 2 bay leaves
    • 3 slices of unpeeled lemon

    • Standing Time Every microwave recipe has a specified standing time. The dish or casserole must stand on a solid surface to retain heat and finish cooking (DON'T use a cooling rack or trivet). Remember, microwave ovens cook by making water, sugar and fat molecules vibrate, creating heat.     Cooking Safely in the Microwave Oven
    Microwave ovens can play an important role at mealtime, but special care must be taken when cooking or reheating meat, poultry, fish, and eggs to make sure they are prepared safely. Microwave ovens can cook unevenly and leave "cold spots," where harmful bacteria can survive. For this reason, it is important to use the following safe microwaving tips to prevent foodborne illness.
    Microwave Oven Cooking
    • Arrange food items evenly in a covered dish and add some liquid if needed. Cover the dish with a lid or plastic wrap; loosen or vent the lid or wrap to let steam escape. The moist heat that is created will help destroy harmful bacteria and ensure uniform cooking. Cooking bags also provide safe, even cooking. Do not cook large cuts of meat on high power (100%). Large cuts of meat should be cooked on medium power (50%) for longer periods. This allows heat to reach the center without overcooking outer areas. Stir or rotate food midway through the microwaving time to eliminate cold spots where harmful bacteria can survive, and for more even cooking.

    With microwave cooking, the trick is to learn to cook by time not sight. Many people become frustrated when attempting to cook in the microwave because they do not realize that most recipes for microwave ovens are written for the 700-watt oven (the industry standard). Don't be discouraged if your first attempt is not a glowing success. It takes time to learn how to cook in your microwave oven. Now for the few recipes that I have. One of the first things I did when I started cooking in my microwave, was to buy a microwave cooking book and followed it exactly, until I was comfortable with using the microwave. The second thing I did and this very important, I kept a notebook beside the microwave and as I experimented with different recipes, I marked down the time it took to cook that recipe. Then there was no more guessing! There is no set conversion from conventional to microwave cooking. Remember when you are converting a recipe, use less liquid (almost 1/4 less) because there is less evaporation; and you can almost eliminate using salt. Foods containing liquid, sugar and fat cook faster. So reduce the cooking time by 1/4 of conventional cooking and then gradually increase until you obtain the desired result.
