Although you might not be able to escape the tradition of boiling potatoes at least once, there's no rule that says comfort food has to be boring. That's where a traditional treat called potato pancakes comes in. Also called latkes, these crunchy, fried delicacies might appear to be challenging to create. I always thought they were difficult to make, probably because I remember seeing my mom and grandmother grating the potatoes by hand, as food processors were still a thing of the future. There are two basic schools of thought on potato pancakes: the grated potato and the mashed potato. I've never had good luck with mashed potatoes. I end up with a sloppy mess that doesn't crisp up the way I like.

Q: Perhaps it is because they seem more aristocratic, or that they need to be coaxed into ripeness, but pears have always appealed to me more than any other of the fall fruits. Basically, apples are good, but pears are better. What is it about pears?

A: I agree with your opinion, and with more than 3,000 varieties of pears to choose from, you could enjoy yourself for ages! Pears are a luscious fruit, and often overlooked just for the reasons you mentioned. Pears ripen off the tree and from the inside out, and often, the skin color does not change; this makes them seem tricky to purchase.
However there is a surefire way to determine which pears are good to eat and which should continue to ripen in the fruit basket: A pear is ripe when a light squeeze at the base of the neck, before the bell shaped bottom flares, yields to pressure. Especially hard pears should be put in a paper bag to ripen. After ripening, pears should be refrigerated.
While comice pears, which have a superior texture and an exceptional taste, is the prized eating pear, other excellent eating pears are Anjou, Bartlett, Bosc, Grand Champion, Honeysweet, Nijisseiki (also called 20th Century), and Seckel.

A couple of weeks back, six men walked into the London restaurant Petrus and rang up an astounding, world-record $62,679 dinner bill. Including tip, of course, just in case you were wondering. Most of the meal was of the liquid variety. The big spenders - bond traders from Barclay's Capital - ordered four bottles of wine: a 1947 Petrus ($17,500), a '45 Petrus ($16,500), a '46 Petrus ($13,400) and a 101-year-old bottle of Chateau d'Yquem ($13,100). They lived it up while it lasted. The next week, for trying to pass off some of the soiree's costs on their expense accounts, five of the six bond traders were fired. With good reason.
