Southern Foods and Recipes
All Purpose Marinade
  • 3 C Dry white wine
  • 1/2 t Cayenne pepper
  • 1 t Onion powder
  • 1/2 C Soy sauce
  • 1/2 t Garlic powder
  • Mix all ingredients together.
  • Marinate the meat for 3 hours to overnight.
  • May be used as a mop sauce during grilling. Dry Rub for Chicken, Ribs or Brisket
    • 1 T Ground black pepper
    • 1 T Ground white pepper
    • 1 T Sugar
    • 2 t Cayenne pepper
    • 2 T Chili powder
    • 1 T Cumin
    • 1 T Garlic powder
    • 1 T Brown sugar
    • 1 T Ground oregano
    • 4 T Paprika (the sweet kind not the hot kind)
    • 1 t Dry mustard
    • 1 T Celery salt
    • 1 T Salt
    • (All amounts can be adjusted for taste!)
  • Thoroughly combine all ingredients.
  • Rub mixture into the meat, wrap tightly with plastic wrap.
  • Refrigerate for 8 hours or overnight.
  • Store leftover mixture in an airtight jar or in freezer. Barbecued Pork Ribs #1 Makes: 4 servings.
    • 4 lbs. Pork ribs, cut in pieces
    • 1 Lemon, thinly sliced
    • 1 Large onion, thinly sliced

      Yields 2 quarts
      Around the stalks of maize in the pre-European gardens of the native Americans wove the vines and tendrils of the cucurbits, better known to us as the squashes, gourds, and pumpkins. Their extensive growth and broad leaves provided a sheltering for moisture from the sun's rays and hindered weed seed germination. The colonists adopted the squashes for their kitchens, especially the pumpkin. They boiled it as a vegetable, pureed and baked it as a savory custard, sweetened it for pies, and preserved it as a jam or chutneylike conserve. In Louisiana, pumpkin was baked in its rind and eaten with butter or gravy. A delicious soup was made from it also, which is not as common in the United States as formerly. Other traditional cuisines of this hemisphere such as the Mexican have retained it, and the French and Spanish have adopted it with enthusiasm. 1 1/2 pounds (675 g) peeled fresh pumpkin, cubed, or 1 pound (450 g) canned, unflavored pumpkin

    ... click here for this month's table of contents It's early morning at the Jade Buddha Temple in modern, bustling Shanghai. The faithful arrive in the central courtyard, ignite bundles of incense and send their prayers heavenward. The devoted bow, raise the incense sticks many times over their heads, then move among the saffron-robed monks to meditate in the large chambers that house statues of the Jade Buddha and the Reclining Buddha. As the worshippers finish their prayers, many stop at the small ground-floor restaurant in the temple for a bowl of noodles and vegetables in broth. Because most observant Buddhists fast before praying, this broth serves as their breakfast. At smaller, more rural temples, the monks themselves prepare and serve these noodles, which represent a kind of communion, or a sharing of the holiness the monks represent. This food is always vegetarian because one of the main tenets of Buddhism states that killing is wrong. Buddhism-and with it, vegetarianism-is a growing force in the new China. Old monks, who scattered and were persecuted during the Cultural Revolution of the mid-20th century, once again reside and meditate in the sacred buildings. Allowed to practice their faith, older Chinese are returning to the temples and eating vegetarian meals at least several times a week. Young people, many of them university students, go to the temples looking for spiritual ballast in their lives. When they find it, they also find a new-yet very old-way of eating.

    Cooking in the south is slowly becoming a lost art. Our ancestor's history can be told in food as well as in numbers and names in some dust covered book. If we have a look at the food prepared in East Tennessee and compare it to the foods of Scotland, it's not hard to see where the roots of the Eastern part of our state were originated. Most of the meals prepared by our ancestors in the "Old South" reflect the history and economics of the region at that time. The south was best known for cotton plantations made famous in books like Gone With The Wind. These did exist but for the large part most rural southerners were sustanance farmers. They made due with what they could grow and what plants and meats they could find in the wild. This was in part because of their financial situation and in part because the areas were so isolated. The art of "Old Southern Cooking" is best summed up as this: A good old southern cook like many of our grandmothers and great grandmothers could go into a kitchen and declare how there is no food in the house. In an hour's time they can have food cooked for thirty people, all of it on the table and all still hot. This is an art form that is rarely duplicated today even with modern conveniences like microwave ovens. This project is hosted by
