I grew up eating better than most kids. I didn't know it at the time, but as I've gotten older and heard friends' horror stories of their moms' botched attempts at "dinner," I've come to feel very lucky. My mom was, and is, a great cook. And cook she did. She always seemed to be in the kitchen. We always had large meals at dinnertime four or five items on the table, plus dessert. It's not that we all had insatiable appetites. It was more of a cultural thing. In our case, Spanish culture. Specifically, Cuban. My dad passed away when I was eight and the family relocated to Miami. My sister and I had typically rebellious teen years. Among the things we insisted on was that mom make more American food, like meat loaf, sloppy joes and fish sticks. The other kids were eating it, and we wanted to fit in. My mother learned to make a mean meat loaf. Fortunately, we wised up after a few years and asked mom to go back to the basics, the food of our early youth. I've since moved to San Francisco, but when I plan a visit to mom's in Miami, I start planning the menu about a month ahead of time. I must drive her nuts. Sometimes I call her on Sunday evenings just to hear what she fixed for Sunday dinner. I listen carefully, savoring the words and reminiscing about how good it all tasted.

Get into the spirit of Super Bowl XXXIII with a Cuban-style feast. Miami not only hosts the big game, it also hosts a vibrant Cuban population. If you've never had Cuban food, kick back and get ready to treat yourself to a bevy of dishes that will punch your ticket and knock your socks off - Nikes and all. For Cubanos, pigs are valued for more than just their skin. Festive celebrations always seem to include a tart and tangy roast pork (quite often a whole pig), accompanied by black beans, steamed white rice, and a zesty sauce known as a mojo. Chicken is also popular, and Cubans may serve Arroz con Pollo, chicken baked with rice, any day of the week. Another popular favorite, picadillo, slow cooks beef with the contrasting flavors of green olives, raisins, almonds and tomatoes. But being a form of hash, picadillo can include a wide variety of ingredients, and every Cuban cook seems to have his or her own personal recipe. Exploring the Culture of Little Havana A Learning Community Project (School of Education, the College of Arts and Science and Eaton Residential College, University of Miami) Cuban Cuisine Cuban cuisine has been influenced by Spanish, French, African, Arabic, Chinese, and Portuguese cultures. Traditional Cuban cooking is primarily peasant cuisine that has little concern with measurements, order and timing. Most of the food is sauteed or slow-cooked over a low flame. Very little is deep-fried and there are no heavy or creamy sauces. Most Cuban cooking relies on a few basic spices, such as garlic, cumin, oregano, and bay laurel leaves. Many dishes use a sofrito as their basis. The sofrito consists of onion, green pepper, garlic, oregano, and ground pepper quick-fried in olive oil. The sofrito is what gives the food its flavor. It is used when cooking black beans, stews, many meat dishes, and tomato-based sauces. Meats and poultry are usually marinated in citrus juices, such as lime or sour orange juices, and then roasted over low heat until the meat is tender and literally falling off the bone. Another common staple to the Cuban diet are root vegetables such as yuca malanga , and boniato , which are found in most Latin markets. These vegetables are flavored with a marinade, called
