    Czech Cooking in the New World

    I am of Czech descent, well except for some gypsy on the part of my fathers mother. She was very embarrassed about that. I was born during April of 1936 at a farmhouse near Leigh, Nebraska. I was the first born and I was the longest baby that the doctor had ever delivered. Six others came later but I was the only one born at home. The first winter and the first summer that I remember went on forever. Time has consistently flown by faster ever since. Living on a farm with the exception of salt, sugar, spices, flour, coffee we were self sufficient. My mother always had a large garden where she grew all manner of vegetables. She also liked flowers and had large numbers of them around the house. We also raised our own animals for meat. When I was young the meat that was not smoked was all bottled. Then later we had large freezers where we kept most of the meat and some fruit and vegetables. My parents enjoyed fish and for a time we would order a 100 pound crate of cod fish. Eventually a neighbor followed our example and bought from the same supplier. One time they were shipped a crate of salmon which they disliked. My parents quickly ordered another crate of cod and exchanged with them.

    Some Recipes of Traditional Czech Cooking Boiled bread
    4 eggs, 4 spoonfuls of milk, 10 dkg. of fine-ground flour, slices of older bread.
    Mix the eggs into the milk and add as necessary much flour as to obtain tough dough, and add a little salt. Cut thin slices of bread, batter both sides with the dough and put in boiling water in a baking pan. Allow boiling on one side, then turn over and boil the other side. Then carefully take out the slices, put them on a dish, and sprinkle with sugar and grated gingerbread Zelòaèka (Sauerkraut Soup)
    with Milk 2 potatoes, 1/4 kg sauerkraut, 1/4 litre milk or cream, salt, two spoonfuls of fine-ground flour.
    Cut rinsed sauerkraut into small pieces and cook it in water. Add two cut raw potatoes. When they turn soft, pour in the milk or cream into which the fine-ground flour which has been mixed.
    Jidáše (Judases)
    1000g of warmed medium-meal flour, leaven from 40g yeast, 120 - 150g edible fat, 100g sugar, 1 tea-spoonful of salt.
    Form the well risen dough into rolls and place them onto greased baking-sheet. After smearing with yolk, bake until the rolls turn golden in colour. Spread over with honey before serving.
