Stir flour and salt together, then mix in butter mixture. Dough will be soft. Chill several hours or overnight. Preheat oven to 350 degrees F (175 degrees C) Light grease or line baking sheets with parchment paper. Using 1/3 of dough at time (keep rest of dough refrigerated) roll into balls about 3/4 inch in diameter. Place on cookie sheets. Flatten with hand until approximately half of their original thickness. Imagine the flattened cookie to be a clock. Make 2 slits, each 1/2 inch long, in cookie at 10:00 and at 2:00. Pinch bottom to form "base" of petal. Sprinkle with red or pink decorator's sugar. Bake at 350 degrees F (175 degrees C) for 8 to 10 minutes or until lightly browned on bottom. Do not brown tops of cookies!

COURSE DATES FOR 2002
This year we will not only be offering our usual Egyptian Colloquial and Modern Standard Arabic courses but there will also be several special courses. These include * Calligraphy * Intermediate Conversation and * Reading for Pronunciation. Generally these courses cost U$5 per hour and usually total 20 hours. Reading and / or writing clinics can be arranged to enhance your skills even further. Each month we have also organised social activities. This gives you a chance to discuss and learn more through lectures, trying the delights of Egyptian cookery (and learning the secrets) as well as visiting many tourist attractions with a professional guide. See the calendar below for proposed activities. There is still the opportunity for studying over an extended period, and some courses will be 5 weeks long to give you more exposure to the language. During the summer we will be organising a Summer Club for students. This will give students the chance to learn more through activities such as watching videos, learning songs, playing games or reading. The Summer Club is held in addition to the classes and will not only be in a relaxed environment but also be fun.

Eat like an Egyptian in Hong Kong

COURTESY OF HABIBI War Fare? Try Hong Kong's Habibi instead War Jitters? Relax in Egypt : TIME Traveler Not inclined to get on a plane to the Middle East? If you want to sample the region's cuisine, then Hong Kong's Habibi may be the next best thing. It offers diners an authentic taste of home-style Egyptian cooking in a comfortable and elegant setting. Third-generation chef and part-owner Hosni Emam came to Hong Kong in 1999 to work as an executive chef on the booming restaurant scene, but it wasn't until the homesick Cairo native started cooking Egyptian feasts for appreciative dinner guests in his tiny apartment that he thought of opening his own restaurant. His friends raved about his flavorful meze (vegetable-based Egyptian appetizers) and succulent tagens (traditional slow-baked stews of meat, vegetables and herbs), but they doubted the menu would sell in a city dominated by Continental and Chinese restaurants. Undeterred, Emam teamed up with veteran Hong Kong restaurateur Jennifer Migliorelli to open an oasis of charm on a busy market street in Central. "It was a gamble," he says. "And we were spending money we didn't even have." Habibi, which means beloved in Egyptian, celebrated its second anniversary last month. The heavy blue door on Wellington Street opens into a cozy space graced with high, arched ceilings and intimate lighting. The decor is exotic: Emam bought the filigree light fixtures and colorful tapestries on trips home. Stone walls and carved wooden lattices separate plush booths lined with silk cushions. It's like stumbling upon a quiet café in a forgotten corner of an Egyptian bazaar, with a welcoming proprietor eager to keep his guests content.
