Let's make it all as easy as possible.

This checklist will help you avoid the minefield in your own kitchen. You could start to cut down on fat and calories straight away, with a few changes to how you cook. Meals will then be healthier and just as tasty.
  • Use non-stick pans or a non-stick vegetable cooking spray instead of cooking with fats and oils.
  • Grill, bake, roast, boil, steam, stir-fry or microwave your food instead of frying.
  • Steam vegetables instead of boiling them to keep in more of their nutrients.
  • Use salsas, chutneys, relishes, pureed vegetables or garlic on meat, fish and poultry instead of creamy sauces, gravy and butter which are more fattening.
  • Remove fat and skin from poultry and excess fat from meat BEFORE cooking.
  • Buy extra lean minced meat instead of regular minced meat.
  • Look for foods with a low fat version of the same ingredient. For example, there are low fat substitutes for cheese products, mayonnaise and salad dressings.
  • Marinate foods with lemon juice, stock, low fat yoghurt, light salad dressing, vinegar or herbs instead of oil.

We thought we would experiment with homemade fat-free salad dressings. The trick was to find something that could replace the "mouth feel" of oil but not add any fat. The solution was threefold: We tried using gelatin, cornstarch, and pectin: three fat-free thickeners. The results were great. Try the Fat-Free Balsamic Vinaigrette (thickened with cornstarch), the Fat-Free Pineapple-Tarragon Dressing (thickened with fruit pectin), or the Carrot-Orange Dressing (thickened with gelatin). Fat-Free Sewers: How to Prevent Fats, Oils, and Greases from Damaging Your Home and the Environment
Fats, Oils, and Greases aren't just bad for your arteries and your waistline; they're bad for sewers, too.
Sewer overflows and backups can cause health hazards, damage home interiors, and threaten the environment. An increasingly common cause of overflows is sewer pipes blocked by grease. Grease gets into the sewer from household drains as well as from poorly maintained grease traps in restaurants and other businesses. Where does the grease come from? Most of us know grease as the byproduct of cooking. Grease is found in such things as:
  • Meat fats
  • Lard
  • Cooking oil
  • Shortening
  • Butter and margarine
  • Food scraps
  • Baking goods
  • Sauces
  • Dairy products
  • Too often, grease is washed into the plumbing system, usually through the kitchen sink. Grease sticks to the insides of sewer pipes (both on your property and in the streets). Over time, the grease can build up and block the entire pipe. Home garbage disposals do not keep grease out of the plumbing system. These units only shred solid material into smaller pieces and do not prevent grease from going down the drain. Commercial additives, including detergents, that claim to dissolve grease may pass grease down the line and cause problems in other areas.

    Peer Review Status: Internally Peer Reviewed By law, foods containing less than half a gram of fat per serving are considered fat-free. But when choosing foods advertised as fat-free, it's important to consider the standard serving size when it's listed on food labels. Food amounts formerly listed as fat-free, such as a teaspoon of fat-free salad dressing, will be shown to contain a significant percentage of fat calories when eaten in a typical amount. And most of the fat-free foods in the supermarket don't come with labels. That's because they are found in the fresh produce department. Nearly all fruits and vegetables, with the exception of avocados, are fat-free or nearly so at normal serving sizes. And even fresh foods will soon have their nutrition information posted, according to U.S. labeling laws. As for other fat-free foods, a one-half-cup serving of most legumes, including beans, peas and lentils, whether dried or fresh, is fat-free. Skim milk and any product made from skim milk, such as nonfat yogurt and skim milk cheese, are also fat- free. Some tasty fat-free snacks include the following:

    • Mix crushed cornflakes with spices in a plastic bag.
    • Dip chicken in egg whites to coat.
    • Spray non-stick baking pan with vegetable spray.
    • Place chicken breasts on pan and bake in 375 degree oven for 30 minutes.
      Serves 6. (Calories 190, Fat 3 g, Sodium 283 mg)
    FRENCH FRIES 2 Lg. potatoes, well scrubbed cut into strips or rounds 1/2 teaspoon paprika
    • Spray a non-stick pan with vegetable spray.

But watch out for high-fat salad dressings and ingredients. They can turn a healthy dish into a fat- and cholesterol-laden, high-calorie disaster. Instead, choose low-fat and fat-free ingredients such as fat-free cheeses, cooked chicken and turkey breast and lean ham. Your local deli can supply many of the ingredients, a great time-saver for the cook. Some supermarkets even have the ready-made fruit, gourmet lettuce, and vegetable salad mixtures. Add your own low-fat or fat-free dressing! For a quick, delicious low-fat warm-weather meal, try this: Spa Pasta Salad Ingredients: ¼ cup reduced-fat mayonnaise ¾ cup fat-free Italian salad dressing 1-1/2 teaspoons Original Blend Mrs. Dash seasoning mix 10 ounces dry tricolored rotelle pasta, cooked according to package direction 8 ounces cooked chicken or turkey breast, cut into ½ inch cubes 1 medium carrot, peeled and thinly sliced ¼ cup each: chopped celery and sliced green onion 1 cup sliced fresh mushrooms 1 cup broccoli florets or fresh Chinese pea pods (or use ½ cup of each) Cherry tomatoes and lettuce leaves Instructions: Mix mayonnaise with salad dressing and Mrs. Dash. Mix gently with cooked pasta, chicken, carrot, celery, green onion, mushrooms, broccoli and/or pea pods. Serve on lettuce leaves and garnish with cherry tomatoes cut in half.
