Issue #20 Feature: Christmas and Hanukkah Herbs The Editor's Herbal Center:
"To have good health throughout the next year, eat an apple on Christmas Eve." What's thriving in my California winter garden this week? Yes, it is truly a rosemary Christmas tree that I've had for nearly 6 years. During that time it has doubled in size. The first year I got it I trimmed it up pretty and wove tiny Christmas lights through the branches. I don't trim it so often anymore because it seems to keep its shape. The lights are still there and the tree has expanded around the lights so you can't see them unless they are lit. Well, thought I'd fire up the lights just for you. Mexican sage fronds and sprigs of drying Cheyenne peppers from my garden for a little color and a final touch of bows made from scraps of lace ribbon complete my patio Christmas tree.

Hanukkah is celebrated in December or late November, on Kislev 25 in the Jewish calendar. It's a joyful celebration which encourages much eating, singing and rejoicing; a happy time when family comes together to commemorate the holiday by lighting a candle for each of the eight days of the celebration, exchange gifts and eat special symbolic foods.

by Louise Fiszer
The twinkling candles in the menorah shed a lovely light on the elegantly set table. Children's faces are a study in joyful anticipation of nightly, small gifts. Aromas from the kitchen predict an especially appealing meal. This year, the first night of Hanukkah, one of the prettiest and most festive Jewish holidays is December 21, 2000. Hanukkah is a time for family and friends to gather around the table to commemorate the rededication of the temple of Jerusalem by lighting a candle each of eight nights. Eating foods that are cooked in oil, such as the much beloved potato latke, is also very much a part of the celebration. This represents the small measure of oil the Jews had centuries ago when defending the Temple. Miraculously the oil lasted for eight days. I've centered this menu around potato latkes, the culinary symbol of Hanukkah, and have tried to balance it with dishes that use little or no oil. This relieves one of some guilt in taking an extra plateful of the delicious latkes. Begin with a hearty bowl of Mushroom Barley Soup perfect for a chilly evening. Accompany the crispy latkes with a colorfully seasonal and healthy Spinach and Tangerine Salad. Let guests help themselves to toppings of tart apple sauce or sour cream for the latkes. Finish with an ethereal, low-fat almond ginger torte for the adults and Hanukkah cookie cut outs (dreidels, menorahs) for the kids.

Cocoa powder gives this oversized brownie its rich chocolatey taste and kids will gladly give up some gelt for this treat! Since cocoa powder also blends easily with other baking ingredients, there are no messy pre-melting steps, leaving more time for spinning dreidels and opening gifts After the brownie has baked and cooled, kids will love to help create their own unique oversized dreidel using frosting and decorative candies. This year, as the lights from the menorah flicker and you watch children play Hanukkah games, you can rest assured that the Hanukkah Dreidel Brownie is the perfect complement to your holiday festivities. [ July 2002 ] BY GILLIAN BECK Yes, people, the secret is out: NOT ALL AMERICANS ARE CHRISTIAN! Like most Americans, I am an ethnic and religious mutt. Mom's Christian, Dad's Jewish-both non-practicing. So here it is the Holiday season and I don't know which way to go. I'm buying Christmas presents, but still remembering my Jewish half by whipping up batches of my dad's special Hanukkah potato pancakes (latkes). They're usually served with sour cream and applesauce. You're on your own for finding sour cream (or plain yogurt), but here wre the recipes for latkes and applesauce! Gillian's Dad's Hanukkah Latkes 4-6 medium size potatoes, peeled
    1 onion, chopped finely
    1 egg
    1-2 tablespoons of flour
A lot of salt and pepper
A generous amount of oil Method: Coarsely grate the potatoes, salt them, and put them in a strainer over a bowl. Let them drain and squeeze out as much liquid as you can. Save the liquid and let it sit for a few minutes. The potato starch will settle at the bottom. Pour off the juice, but add the potato starch, along with the potatoes and the onion, to a large mixing bowl. Add the egg, flour, salt, and pepper. Mix well. Heat a generous film of oil in a frying pan. Flatten spoonfuls of the potato mixture into pancakes and fry them until they're crisp and brown on both sides. Be sure to use plenty of oil, because it's part of the Jewish tradition-the oil-rich latkes are supposed to remind us of the miracle of the one-day supply of olive oil that burned for eight days when the Jews won back their temple in Jerusalem from the Greek/Syrian occupying forces about 2,200 years ago.

Hanukkah Doughnuts Presented by Becky Low on December 14, 1998
"Hanukkah celebrates the time in Jewish history when there was enough oil to light the temple lamp for 1 day, but miraculously the lamp stayed lit for 8 days. The miracle is remembered by lighting the Menorah for 8 days and the symbolic use of oil in the family meals. Other than latkes and doughnuts few foods are associated with Hanukkah. Following are 2 variations of Hanukkah doughnuts. " Variation 1: Jelly Filled Doughnuts Ingredients:

  • 3/4 cup milk
  • 2 tablespoons butter
  • 1/4 cup sugar
  • 2 tablespoons active dry yeast
  • 2 eggs
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 3 cups flour
  • 1/2 cup jam, or preserves
  • oil, for frying
  • powdered sugar Method: Scald milk by heating almost to a boil. Add butter and sugar. Cool to lukewarm. Add yeast and stir to dissolve. Beat in eggs, salt, cinnamon, and 1 cup flour. Stir in enough more flour to make a soft dough. Knead dough on a slightly floured surface until smooth and elastic. Cover and let rise until double in size. Knead out excess air. On a lightly floured surface roll dough to 1/8 inch thick. Cut into circles 2 inches in diameter. Allow to rise slightly (about 15 minutes). Heat 2 inches of oil to 375 degrees. Place 1 teaspoon jam or preserves on each circle of dough and shape the dough around the jam, completely sealing jam inside. Carefully place doughnuts into hot oil, brown on both sides. Drain on a paper towel, then sprinkle with powder sugar. CAUTION: Jam inside doughnut will remain hot! Makes 24
