Stuffed Perch From The Art of Hungarian Cooking Sullo Toltve 4 Servings 2-pound perch
1/2 cup bread crumbs
4 anchovies, chopped
1 onion, finely chopped
1 teaspoon chopped parsley
1 tablespoon paprika
4 tablespoons butter
Lemon slices Clean and bone the fish. Combine the crumbs, anchovies, onion, parsley, and half the paprka and butter. Stuff the fish with this mixture. Place in a buttered baking dish. Rub the outside of the fish with the remaining butter, and sprinkle with the paprika. Bake in moderately hot oven (375 degrees F.) for about 30 minutes or until fish is tender. Garnish with lemons.

The Bottom Line Rich sauces, heavy in paprika, Hungarian food is definately different to typical food from neighbouring countries. Give it a try - it is certainly interesting!
PAPRIKA PAPRIKA PAPRIKA!!
"PAPRIKA" is really the biggest thing you need to know about Hungarian cuisine!
The sweetish, mildly hot Paprika pepper is absolutely everywhere in Hungary. If you wander the streets of Budapest, you will see elderly ladies on almost every street corner, at entrances to traain stations, and Underground stations, selling fresh Paprika peppers. It makes you want to explain the economic theory of supply and demand to them..... "the reason you arn't making much money, is that you are over supplying the market with Paprika..... why don't you diversify?....".
If you go into Budapest's huge market, you will see stalls selling huge rings of sausage, and ground paprika ....... (incidentaly, they also sell huge bags of dried mushrooms (Cepes, Penny Buns and Chantarelles, amongst others), for £3-£4 a bag - the bargin of my holiday!
However, one look at any traditional resturant menu will also tell you that demand is also huge.... Paprika sausage, Gulyas soup, Chicken in Lesco, even the salads have peppers in them, and the list is endless - the country is Paprika mad!!

One of my favorite cookbooks is simply titled Central European Cooking . It was given to me by a young man I worked with in New York who told me he was a gypsy.
I make a Hungarian dish in honor of a departed friend from San Francisco. He was Scandinavian, and lived in Vienna (kept) for years. I make it in early summer using smoked pork chops, onions, caraway seeds, chicken broth, white wine, garlic, paprika and the freshest of green string beans from our local green markets.
Every fall I make a hearty beef goulasch that's loaded with onions, green and red peppers, paprika, dill, caraway seeds, garlic and fresh tomato . . . again, all from the green markets. It's topped with sour cream and slivered dill pickles.

Eastern European fare, in contrast, is often associated with dull, starchy dishes, mounds of cabbage, and overfed peasants in babushkas. That's why when I left to spend a year in Hungary, I didn't have high expectations for the food. I was shocked to find that it is, simply, exquisite. It is also unique, and without a doubt ranks with the world's better-known culinary treasures. Even the cafeteria fare at the school where I worked had me going back for seconds and thirds, and long after I returned home, I continued to hunger for , and The unique flavor of Hungarian food arises from a special confluence of cultures. Nestled between north and south, east and west, these descendants of nomadic horsemen have been occupied by both the Turks and the Austrians. As a result, their food blends the heartiness of Northern European fare with the spice of the South. It was the Turks who introduced paprika to Hungarian cooking. Simply translated, it means pepper, and can refer to Hungarian varieties like the pale green, sweet type most closely approximated by Italian peppers here. Usually, however, it means the crushed pepper powder that gives the classic dishes their bright red hue and distinguished spicy flavor.

[ Bread Recipes ] [ Nutritional Information ] Bread is a baked food made from a dough of ground or milled cereal grain, usually wheat flour, and leavened by chemical or microbiological action. Because of the leavening process, the making of even the simplest kind of bread is a fairly complicated procedure. Only wheat flour contains gluten, a substance that supplies the structure needed for leavening. Many non-wheat-growing cultures have never known bread.
Bread making may have originated in Egypt. Archaeologists have found pieces of bread that show clear evidence of leavening action in deposits dating from about 3500 BC. The "sun bread" of Upper Egypt, made today by a method that must be very old, is prepared from a thick batter that is placed in the sun to leaven and partially dry before it is baked into a hard-crusted loaf with a sweet, soft interior. By the dynastic period, loaves of special shapes and sizes were made for religious purposes and for consumption by different social groups.
Bread was a common foodstuff in Rome, and a sophisticated baking industry developed, using mechanical kneading devices. During the early Middle Ages, baking technology regressed; although eventually the growth of bakers' guilds resulted in improvements in techniques and tools. During the Industrial Revolution, an acceleration occurred in the development of baking technology, and today the making of bread is a highly mechanised process in most Western countries.
