Hungarian cuisine
Maybe you have already heard of delights of Hungarian cuisine. The traditional Hungarian dishes abound in piquant flavors and aromas. Dishes are flavourful, spicy and often rather heavy. People with a sensitive stomach, should be careful. Flavours of Hungarian dishes are based on centuries old traditions in spicing and preparation methods. The exquisite ingredients are produced by local agriculture and husbandry. Paprika and garlic is to be found everywhere. In the autumn, a fascinating view is the strings of red paprika (unground red pepper) hung on the white walls of the houses in the neighbourhood of Kalocsa, a town along the Danube. Some savoury courses to tickle your palate. (recipes also) Some delightful drinks to rinse your throat.

This recipe was given to me by Elvira Schade, from Schade's Restaurant in Fredericton, New Brunswick, Canada. If you're ever up that way, a stop at Schades is a must. Their authentic German cusine is some of the best I've had, anywhere. It's restaurants like this, tucked in small, out-of-the-way areas, that make traveling so much fun. You just never know what kind of treasure you'll discover. Follow this link to learn more about New Brunswick, it's regional cuisine, Schade's Restaurant and more recipes. 1 1/4 pounds (500g) beef

One way for male significant others (SOS’) to ensure that they don’t become SOBs is to cook for you! Well, mine did recently, and it gives tickets for a lot of forgiving on things like losing the dog-training whistle, for weekend guests he forgot to tell me about, and things like that. He cooked the following "throw it all in a pot" recipe. And it is so easy and turns out soooo delicious, it’s sort of embarrassing. I could even do it! I think one of his hunting buddies taught him this one.
In a medium size dutch oven or oven dish, place a bunch of wild birds. We used a couple blue grouse, a quail and maybe a hun. ( Clean ‘em first!
Pour a couple 16-ounce bottles of WISHBONE Italian Dressing ( sorry, but it has to be WISHBONE ) over the birds. Smother the top with sliced onions. Stick it in the oven, COVERED, at 375 degrees for about an hour (more or less according to how many birds you have and how big they are).
Uncover and let the top of the birds brown for another 15 minutes, or place under the broiler to brown briefly.

Hungarian Crepes with Hazelnuts Recipe Ingredients
    Crepe
1 cup flour 2 large eggs 1/2 cup milk, skim 3/4 cup club soda 3/4 tablespoon canola oil Filling 2 ounces hazelnuts 1/3 cup 1% milk 2 tablespoons sugar 1 tablespoon rum, 80 proof 1 tablespoon orange zest Sauce 1 cup 2% milk 3 1/2 tablespoons powdered sugar 1 1/4 tablespoons cornstarch 1 1/2 tablespoons cocoa 1 1/4 tablespoons Neufchatel cheese 1 teaspoon vanilla extract Instructions To prepare the crepes, combine the flour, eggs, milk, and club soda in the bowl of a food processor. Blend at top speed for about 1 minute, then scrape down the sides and blend again until the ingredients are well combined. Add more soda if necessary to make a batter the consistency of heavy cream. Cover and let it stand for about 30 minutes. Heat a 6 1/2- to 7 1/2-inch bottom diameter coated skillet with sloping sides until very hot, then brush the pan with canola oil. Pour 1/3 cup of batter into the hot, greased skillet. Quickly turn the skillet around so that the batter spreads up the sides and thinly covers the entire bottom of the pan. Put the pan back on the heat for about 1 minute. Give it a few shakes to loosen the pancake then turn the crepe over with a spatula. Cook briefly, about 30 seconds, on the second side or until light brown spots appear, then turn it out onto a warm plate. Repeat with the remaining batter, brushing the skillet with oil each time.

    • This is not a quantity - you say this when there are six guests and you only prepared enough food for eight Something light ? feathers? - you say this when someone says they are not hungry, and would like to eat only a little The best cake in the world is bread and butter - you can (and should) say this all the time

    Eva's Hungarian Kitchen
"It is often said in Hungarian circles that you can assimilate to your adopted country's language, customs and way of life, but your stomach remains Hungarian. The reason is that food is the strongest reminder of childhood, tradition and culture. The sights and smells, family and memories of the faraway homeland are re-conjured over a bowl of steaming food, capturing a little of the faded rose-colored past. Because of this strong bond between culture, tradition and food, historical notes and anecdotes are interspersed throughout the book to give you a more intimate feeling for the country, the people and the customs."
Eva's Hungarian Kitchen was a labor of love to provide my son with a portion of his cultural heritage, in English, his mother tongue. Eva's Hungarian Kitchen became a success beyond my dream. This comprehensive original cookbook was first printed in 1984 and is presently in fourth printing by popular demand. Eva's Hungarian Kitchen contains all the fondly and nostalgically remembered traditional home recipes, that mothers and grandmothers cooked for their families, adapted to the modern kitchen. A complete treatise on traditional Hungarian home-cooking.
