ITALIAN COOKING We offer two types of Italian cooking courses for all levels of experience : A) PROFESSIONAL COURSES For those interested in a professional career as a chef, pizza maker, pastry cook, gourmet or sommelier, the school offers the possibility to attend professional courses at a cooking school recognized by the Lazio Chefs Association. Courses begin in January, April and September. Complete course plans are available on request from our office. The courses being offered are as follows: COOK Level 1 - a practical course teaching basic cooking techniques and the use of different ingredients.

Book: "Cooking the Roman Way: Authentic Recipes from the Home Cooks and Trattorias of Rome" (HarperCollins, $34.95, 314 pages) 108 recipes Author: Davie Downie's food and travel articles have appeared in many publications, including Saveur, Departures and the Los Angeles Times Magazine. His wife, Alison Harris, did the photography for this cookbook. Reviewer: Louise Massante. This is a wonderful cookbook that is liberally sprinkled with Roman history, geography, cooking lore and beautiful photographs. For those who have traveled to Rome, the photographs are a reminder of Italy's beauty. The recipes are tantalizing, and I was often happily distracted by the fascinating historical side notes. There are three pages of acknowledgments citing everyone who contributed recipes and historical information. This builds a strong foundation for the authenticity of the recipes. The two recipes I chose were Gnocchi di Patate (potato gnocchi with tomato or meat sauce) and Garofolato e Sugo d'Umido (slow-cooked rump roast with sauce of cloves and bacon that doubles as pasta sauce).
