TUSCAN COOKING SCHOOL offers a full-immersion opportunity to work with the finest chefs in Tuscany, creating characteristic recipes which have made Tuscany famous. Tuscan rustic cuisine is simpler than most people imagine, and depends entirely on seasonal ingredients. We gather our herbs from the herb garden, and all local cheeses and meats come from the neighboring valleys. In our program you are immersed in a culinary paradise, where you will live on the very farm where sheep graze, will walk the vineyards where the finest malvasia and sangiovese grapes grow and are harvested, to create ruby-colored perfect Chianti. In our first program, June 28- July 5, we live at a magnificent villa outside Siena, immortalized in the exquisite cooking school book by Stephanie Alexander and Maggie Beers, entitled Tuscan Cookbook . In our second program at an elegant villa near Florence, July 12-19, we will have an equally satisfying experience, but we haven't had time to write a book yet! Learn to cook authentic Italian dishes in Tuscany in an informal and friendly environment where you will learn the passion of the Italian kitchen and have fun doing it. A comprehensive hands-on cookery course given by Paola and Michele who will teach you to make splendid Italian 4 course dinners covering all the basic Italian cooking techniques, from pasta to pastries and everything in between.
The cooking lessons are given in the "Cantina" of an old recently restored large Tuscan villa - Casa Ombuto. Casa Ombuto is a luxurious villa with a large heated pool and includes all modern comforts. The villa is situated on a hill with a spectacular panoramic view of the surrounding hills and valleys; it is totally secluded but only 50km south of Florence. The cookery courses are from Saturday to Saturday and include 4 elaborate hands-on cooking sessions, with enough time to relax and enjoy the surroundings. A one-day excursion will be organised to visit a vineyard for wine tasting, as well as to a local producer of olive oil and time for shopping. It is also possible to bring along a non-participating partner who can spend the day enjoying the surroundings, site-seeing or playing golf and could then join the group at dinner time. This seven-day course features five cooking lessons taught by Grand Hotel Portovenere Chef Paolo Monti, visits to the central fish and vegetable market, Cinque Terre Vignard, olive oil mill, Cinque Terre and Vermentino Lunae wineries, and one-day Parma trip to view production of Prosciutto di Parma and Parmigiano Reggiano.
The course is based on learning "Instinctive Cooking" using fresh herbs and ingredients and incorporating the tricks and shortcuts great chefs use. The Master Class in Italian Cooking: Class Facts
This class is designed for the serious amateur, as well as beginners or professionals with a desire to learn the basics of Italian cookery.
Students attend three consecutive evening classes from 5:30 p.m. to 10:30 p.m. Class size is limited to 12 students.
Classes are held in The FCI's International Culinary Theater. The menu for each class is provided that evening (Marcella likes it to be a surprise!) Every evening ends with students joining Marcella and Victor around the table to enjoy the meal they've just prepared.
The French Culinary Institute provides tools for students for the duration of each class. Students will be given a specially designed apron to use and keep.

All around the country, you'll find everything from individually tailored classes, to demonstrations, to hands-on lessons complete with visits to noted estates and wineries. What all of these classes share is the chance to learn about Italian cuisine and culture (you just can't separate one from the other in this country), taste a variety of choice wines (an integral part of any Italian meal), and gain insight into the preparation of some of the world's most spectacular foods. LEARN ITALIAN IN ITALY AT "TORRE DI BABELE" THE ITALIAN LANGUAGE SCHOOL WELCOME AND THANK YOU FOR VISITING "TORRE DI BABELE The Italian language school "Torre di Babele" is officially authorized by the Italian Ministry of Education and has been in operation since 1984 offering Italian language courses for students from all over the world as well as training courses for teachers of Italian for foreigners. Located a few minutes walk from the Coliseum, the school occupies a four-storey building, with an airy terrace and garden, and is easily reached from all parts of the city by public transport. The courses, which are offered all year round, are taught by highly qualified teachers in small groups, with a maximum of 12 students.
