May 31, 2002 New at the southern edge of Lincoln Square is the stylish 70-seat bistro TOURNESOL It feels like a bar, but the Bucktown corner eatery CLOUD NINE has a full and nicely executed menu, not to mention a thoughtful wine list. The slender space houses two rows of linen-topped tables and a refurbished old bar. A small lounge up front makes for comfortable waiting, although that's not an issue yet. Chef Lionel Reim II, a Napa Valley native who spent several years cooking in Mexico City, puts together some complex dishes in the tiny bar kitchen: There's a starter of seared sea scallops, delicately browned without being overcooked and resting on a fresh corn ragout with cilantro oil. An eight-ounce New Zealand filet mignon came cooked to the ordered medium rare, set in a pool of satiny green peppercorn sauce. General manager and former Tru bartender Emily Salyer takes her job seriously, tending to patrons like a pro. Wines by the glass include a refreshing 2000 Dopff Tokay pinot gris and a 1999 Onix Priorat grenache. Cloud Nine is at 1944 N. Oakley, 773-486-3900. Logan Square's BUONA TERRA seems stamped out of same cookie cutter as the Mia Francesca chain: it serves pretty good food at reasonable prices in a compact space with the requisite exposed brick walls. That formula's not necessarily a bad thing; the caprese, fried calamari, and carpaccio with truffle oil and capers here are good just not original. Chef-owner Jose "Chepe" Garcia spent ten years cooking at Tuscany on Taylor and a year as executive chef at Riva, and his angel hair with tomato basil sauce, gnocchi in a three-cheese sauce, and farfalle with asparagus, spinach, and ricotta are all priced under ten bucks and served in ample portions. To follow there are fewer than a dozen entrees, ranging from a roasted half chicken to veal in a sherry sauce to tournedos of beef in a portobello sauce. The front room can get cramped with people waiting at the small bar; the second room is a bit more spacious. Buona Terra is at 2535 N. California, 773-289-3800.

On Saturday May 4,2002, we are having Claims Maintenance at our Groom Creek Claims on the upper Hasayampa, Map #4. We are going to meet at 9:00am, due to the drive time from Phoenix, at the gate leading into the claims. We need to cut back overgrowth from the roadway going down the hill and do some road repairs. Will have a few chain saws to help. Due to Forest restrictions on open fires, we may not be able to do any cooking.If so, Roslyn will go into Prescott, to pick up something for lunch for those volunteering. Asparagus a Dozen Ways
by Kate Heyhoe This season's asparagus crops have been especially tasty, plentiful, and so far, affordable. After the first month of the harvest, I've pretty much gorged myself on plain, simple steamed asparagus, with just butter and perhaps a shot of lemon juice. By now, I'm ready to embark on a more adventurous culinary journey with these luscious green spears. I'm tossing asparagus into pastas, risotti, and salads. Steaming gives way to roasting, baking, and blanching. Flavorings range from Asian sesame to Italian gorgonzola. In addition to the dozen recipes below, try serving aspargus in other ways, such as:
Another amazing thing about asparagus: Unlike broccoli, it never seems to be scorned. I'm sure some people out there don't favor asparagus, but I have yet to meet one knowingly. So, whether you're enjoying it for yourself or serving it to others, fresh spring asparagus is the perfect guest, at breakfast, lunch or dinner.

Iron Cooking Pots Help Combat Malnutrition
John Pickrell Iron deficiency, the most common nutritional disorder in the world, is a major problem in many developing countries. The World Health Organization (WHO) currently estimates that a mind-boggling 4 to 5 billion people may suffer from some form of iron deficiency—that's 66 to 88% of the world's population. Up to 2 billion of these people also suffer from anemia, a condition often due to insufficient iron in which blood has too few red blood cells.

Mattioli Now, a new study, which tested iron uptake from recipes including Chinese cabbage, adds to the evidence that iron cooking vessels may be a cheap and effective way to fight deficiency of the micronutrient in developing countries. Anemia, which increases peoples' susceptibility to other diseases, is associated with reduced work productivity and economic output. WHO estimates that effectively tackling iron deficiency could boost productivity by up to 20% in many developing nations. The major reason for iron deficiency is the naturally small amount of iron in plant-based foods—such as rice and cassava—which are staples in rural areas of the developing world, says physiologist Raymond Glahn of the USDA Agricultural Research Service's Plant Soil and Nutritional Laboratory at Cornell University in Ithaca, N.Y.

Janet Raloff Thanksgiving, Christmas, and Passover are among the few holidays on which home-cooked meals remain the norm. On most other days of the year, a large and growing share of U.S. diners happily leave the cooking of at least one meal to professionals. Eating in.
Eating out is especially common for the nation’s smallest households, according to a new Department of Energy survey, but all demographic groups have been increasing their consumption of meals prepared outside the home. New data from the National Restaurant Association (NRA) confirm this trend. In fact, notes NRA president Steven C. Anderson, restaurant cuisine increasingly augments even traditional sit-at-home meals. For instance, "one-third of Americans turn to prepared foods [principally side dishes and desserts] to help with their holiday meals," he says. "Currently, consumers spend more than 46 percent of their food dollar on freshly prepared food away from home—up from 25 percent in 1955," observes Hudson Riehle, senior vice president of the National Restaurant Association and its top economist. Within 8 years, he forecasts, consumers will be directing more than 53 percent of their food spending to meals prepared commercially.

Master Chef Daniel Bonnot Instructor for the sessions is master chef Daniel Bonnot. Chef Bonnot was born in France and worked under Parisian chefs for seven years. After several years cooking in London at the Savoy Hotel, he moved to Guadeloupe, where he learned to integrate Creole cooking with French cuisine, and was "chef saucier" at La Caravelle. In 1979 he moved to New Orleans where he was proprietor/chef at Chez Daniel and most recently, Bizou. He was the mentor for the famous New Orleans chef Susan Spicer; he was named Chef of the Year in New Orleans in 1980 and 1995, and Bizou was named one of the 10 New Best Restaurants in the Country by John Mariani in Esquire in November,1996. Chef Bonnot has been a frequent celebrity chef at the March Jazz Fest in Juan-les-Pins (on the French Riviera), on luxury liners and around the world.
