Main Course BOILED BEEF WITH HORSERADISH SAUCE
VARYONAYA GOVYADINA S KHRENOM SERVES 4-6
Ingredients:
1 kg shin beef or brisket
2 small hot red chillies
1 teaspoon whole black peppercorns
6 potatoes, peeled
2 carrots, scraped
1 turnip, peeled
1 parsnip, scraped
50 g grated horseradish 2 tablespoons sour cream
1.Place meat in a saucepan with enough water to cover. 2.Add chillies and peppercorns and bring to the boil. Cover and simmer for 2 hours. 3.Halve potatoes, carrots, turnip and parsnip. Add to meat and cook for about 30 minutes until tender. 4.Remove meat and vegetables from stock. Slice meat and garnish with vegetables.. 5.To serve add horseradish to sour cream with a little stock and pour over individual servings of meat. TBA - Russian Night of Poetry, Drama, and Music Weekly Russian Table Russian Table is held twice a week in Haffner Dining Hall, and is open to anyone who wishes to participate. Students can meet on either Tuesday or Thursday evenings at six o'clock. Russian Table is an excellent opportunity for students of any level to practice their Russian skills, and is also a great place for native and more advanced speakers to simply kick back and enjoy the company of other Russian speakers. Russian Movie Nights Watching Russian films can provide unique insights into the history, culture, and way of life of a people, and offers excellent practice in understanding native Russian speech . Movies nights are held every Saturday night at 7pm in Haffner AV Room. Every week the movie selection rotates between contemporary Russian cinema and Russian children's films to better incoorperate students at every level of Russian. Movie nights are also a great place to relax and have fun with students who have similar interests and areas of study. Russian Cooking Nights Situated sporadically throughout the semester, Russian cooking nights are an excellent opportunity for non-native students to try authentic Russian cuisine! Native students also help teach how to cook these dishes so that everyone gets to join in the fun.

My mother says she believes my interest in food stems from an incident in my youth...right before she gave birth to me, she ate a doughnut, and thus began my interest in food. I am not an excellent cook, nor a particularly inspired cook, but I'm a good cook. Creative and experimental with a touch of native ability handed down from my grandmothers. I collect interesting recipes, so don't hesitate to pass along interesting recipes.
Cookbooks in particular
This page primarily existed to give me a means to carry this list with me everywhere. However with the acquisition of a PalmPilot (later replaced by the TRGPro using the same OS and data) a robust, full-figured, but slender palmtop computer. The Pilot and an excellent database program created for the Palm called JFile , by the excellent John Lehett, I have allowed me to bypass this wide webbish world and carry my library comfortably in my purse. As such, I'm not sure what there is to do with this page. Technically it's no longer needed, but I've gotten so many comments on it and people who were interested in the list of the books and in finding them for me, I will leave it and continue to update it. Note: Not even a week after I put this new information up, I received intelligence that this list was being handed out some sort of authoritative collection. It isn't. In this intelligence was a request to add dates to the information I include. I willingly comply.

presents Russian culinary culture from the rudimentary grain-based diet of old to the lavish cuisine of beef stroganoff, caviar, and blini, using everything from a 16th-century engraving of envoys from the court of Ivan the Terrible to contemporary paintings satirizing the introduction of fast food into post-Soviet life. Artworks depicting the traditional Russian stove, the feasts of old Muscovy, feasting and fasting in Russian Orthodox life, the samovar, and the allure of vodka point up just how important hospitality is to the Russian national identity. Catherine Cheremeteff Jones
presents the history of the Russian custom of drinking tea and explains how the samovar has been a symbol of family, home, and comfort since tea became a popular beverage in Russia in the 19th century. dough
For the dough take 4 eggs, 200 ml of water, 600 gr of flour and make a hard dough.
mincemeat
Take 200 gr of minced beef and 200 gr of minced pork . Then add some chopped onions, salt, pepper. You can add some milk or meat stock to make it more tender and juicy.
Now follow these steps:
1. Take some dough and make a "sausage" (1 - 1.5 cm in diameter)
2. Cut it in pieces about 0.5 cm thick.
3. Roll each one so that it becomes a circle 1-2 cm thick. Don't use too much flour as it'll make it difficult to stick the ends.
4. Put some mincemeat in the center.
5. Fold the circle so as to make it half round, stick the edges.
6. Cook in salted boiling water for 5-7 mins.
7. Take them out of water and serve hot with butter, mayonnaise, ketchup or sour cream. NOTE: use much water to cook pelmenies as they can stick to each other. Don't forget to stir them from time to time. Also mind that you can freeze them and keep in freezer for a long time. When you want to cook them, do not defrost them. Just cook as usual.
