    Bacon: Minimize bacon shrinkage by running bacon under water before frying. This reduces shrinkage by about 50%. Chicken Breasts: The best buy at the supermarket is to purchase a large bag (usually 3-4 pounds) of boneless, skinless chicken breasts from the freezer section, rather than buying it a pound at a time from the fresh meats section. This saves me about $15.00 a month or more. Fish: When baking whole fish, wrap in aluminum foil. When fish is done, it can be lifted from the baking pan without the fish falling apart. To remove the foil, slip a spatula under the fish and slide foil out after fish is on the platter. Marinading Meats: Lemon and lime juice and vinegar aren't the only things that work well as marinades. I use kiwi fruit, either sliced, mashed, or juiced. For sliced, lay the meat over the slices and lay slices over the top of the meat as well. Allow 2-4 hours to marinate. For a faster method, mash or juice the kiwi and use in marinade as a substitute for lemon, lime, or vinegar. This method only takes about 1/2 hour for tender meat. I also use unseasoned meat tenderizer powder (found in the spices section of the supermarket) for the times I just don't have time to marinade meat.

    What do omega-3s do?
    When combined with a healthful eating plan, omega-3 fatty acids may provide a protective effect against heart disease. Research also suggests that omega-3s help lower the risk for heart attacks and sudden cardiac arrest due to an irregular heartbeat.
    How much seafood should I eat?
    While there are no specific dietary recommendations for omega-3 fatty acids, studies show that the protective effects of omega-3s can be achieved by eating seafood twice a week.     HOME What's New Foods of Louisiana Recipes ... Contributions Seafood S eafood just happens to be everywhere in South Louisiana. Shrimp crabs crawfish oysters ... turtle are a few, and of course, fish . A few are reptiles and amphibians but what the heck, they live in water, they're seafood to me. Click on the links above or just scroll down, your choice.... Shrimp Shrimp are harvested on the Louisiana saltwater bayous and in the Gulf of Mexico. In general we have two seasons; the Brown Shrimp or May season usually starting in May and lasting for about 45 days. The White Shrimp Season usually begins in August and lasts until around December (more on Shrimp in Louisiana....) Fresh shrimp are usually de-headed and frozen with the shells on in a little water in a zipper lock type bag (get all the air out). The water is essential to prevent freezer burn. Some folks peal the shrimp first but I find they won't last as long especially if there is a little air in the package. Leaving the shells on leaves me with more cooking options also; like baked shrimp and making shrimp stock. Fresh shrimp should be kept covered with ice (not ice water) for handling. If they get warm they'll spoil and start smelling immediately. If you see any red on a fresh shrimp it means it got too warm at some point. I won't buy em'! I like a 40 count (number per pound, heads on) shrimp for gravies and 20 count for boiling, baking, grilling and frying. To me, any larger has too much of an iodine taste.

    C o o k ... a - Cooking Seafood M any a Friday in South Louisiana consists of a seafood cookout. We normally pick Friday because during Lent (Catholic religious observance) we won't eat meat. It just kind of carries over. Seafood is a big staple here also and in great abundance so naturally we cook it a lot. Cooking seafood calls for a few rules.
    • Keep it cool before it goes into the pot. Marinade it for less that an hour Don't over cook it. Cook a little more than you think you need!
    In general for adults....
    • 1 lb of fish per person 4 lbs of unpeeled crawfish per person 1/2 lb. shrimp (fried) per person 1/3 lb shrimp or crawfish (in sauce) per person 3 large to 5 medium whole crabs per person
    Keep in mind that side dishes constitute the make-up of the entire meal so increase or reduce the amount of seafood as needed. For instance if you're frying fish and shrimp and will have a potato salad, white beans and rice and french bread with it consider reducing the seafood portions. Serve fried seafood hot and season it right out of the oil. If you're not eating right away put the oven on 200°F (or as low as it will go) and let it warm up. Cover the seafood with paper towels (not plastic wrap) or loosely with foil, turn the oven off, and put the pan in the oven. If you seal the pan with plastic wrap or foil the seafood will become soggy. If you leave the oven on it will dry out too much. This only works for so long. After a few re-heats the seafood will dry out anyway.

The Canadian equivalent is the main street diner. Every town has one, a place where sliding into the booth has the comfortable feel of pulling on your favourite slippers. The air carries warm kitchen aromas, the waitress greets you by name as she pours the coffee. The regulars smile acknowledgements, and go back to putting the world right. "My father specialised in English fish and chips back in 1987", said Gayna, taking a well earned break from the kitchen. "He played this Bing Crosby tape all the time, and started tacking photos of his musical favourites on the walls." She poured some tea. "My favourite is Mae West. I love movies and had a great collection of pictures, which I knew that I would use one day ." She redecorated the restaurant in 1992, covering all available space with movie star stills. "I think they're wonderful, they give people something to look at while they eat." When I asked her about the name, she explained that her Dad was always feeling chuffed about something or other, so it was a natural.

    catching salmon, striped bass and other gamefish introduced in freshwater lakes and reservoirs. Fish Recipe Pointers All fish should be eviscerated and iced as soon as possible. Fresh is always best except for odd species such as moon snails that tenderize if frozen and make good chowder. If you can smell fish cooking, the pan or pot is too hot. Figure about ten minutes cooking time per inch thickness Dishes should become more complex or spicy as fish ages.

Baking Broiling Steaks, whole fish, split whole fish and fillets lend themselves well to broiling. Place fish, one-inch thick or less, two to four inches from the heat source. Place thicker pieces five to six inches away. Baste frequently with an oil-based marinade. Using the 10-minute rule, cook on one side for half the total cooking time, basting once or twice, then turn the fish over to continue broiling and basting.
