Spanish Cooking and Wines It seems to us that Spanish cooking is not used in US homes as much as it might be. Many of the techniques are quite simple. And, many of the recipes use ordinary ingredients. We think that only unfamiliarity with the cuisine has prevented a wider use in American homes.

How to Begin
If you wish simply to get a taste of Spanish cooking, click to the left for a few (absurdly) simple starter recipes.
To progress further, there is no doubt which cookbooks to use. Either Penelope Casas' Food and Wines of Spain , or her newer Delicioso!, is the place to start. See Bookstore for descriptions.
From our own recipe collection, favorites in our household have long included Pollo Chilondron (chicken braised with roasted red peppers and ham) and Baked Scallops with Onions and Ham. Both of these are quite simple and can be recommended as places to start in Spanish cooking.

Spanish cooking can initially be described as a cuisine relying strongly on olive oil and garlic. It is Mediterranean cooking and easily identified by the presence of these two elements in the recipes and flavours. These basic and unmistakable ingredients which Spain shares with other Mediterranean countries are found in a wide variety of dishes.
Spanish cooking has basically popular roots. Although a well-served table is habitual, without, however, making any fuss about it except in the Basque Country and Catalonia any refined palate without prejudices will no doubt live through some unforgettable experiences.

Spanish Home Cooking
The journey to my book of Spanish cuisine began with an invitation to celebrate a wedding in Spain. As my husband and I traveled through the country, I realized how much I loved the culture, the language, the food, the beauty of the countryside, and the openness and generosity of the people.
As it happened, that period coincided with my entry into the Internet. It was on line, during a discussion of recipes, that Nacho from Barcelona suggested we get together and write a Spanish cookbook. It seemed like a perfectly natural idea. Though we had no idea where such a book would lead, neither did we doubt that it would yield an array of delicious discoveries.
In all, I made several long trips to Spain, camera and tape recorder in hand, learning as I went. I was invited to share many home-cooked meals, from whole-family gatherings to dinner for two, always in good company. People generously gave me recipes and helpful explanations as well. And at bars, in restaurants, wherever I was, I asked for more ideas.
One spring day, on my quest for the best gazpacho, a waiter in Córdoba said to me, "You Americans always ask how things are made so you can go home and do the same thing." "Of course," I answered, "that's the idea!"

    Spanish Omelette (Tortilla de patatas)
    1/4 kg potatoes 6 eggs1dl oil 1 onion Peel the potatoes, wash them thoroughly and cut them into thin slices. Chop the onion. Heat oil in a frying pan and then add the onion. Sautée the onion until it is brown and then add the potatoes and a little salt. Stir the contents until the potatoes are done. Beat the eggs, add a pinch of salt and then the potatoes. Mix well. Turn the heart up under the frying pan and add the egg and potato mixture. Brown on one side and then turn the omelette over to brown it on the other side.
    A Galician recipe for hake (Merluza a la gallega)
    1 kg hake 2 dl olive oil 150 g onion 2 kg potatoes 1 tbsp flour Seasoning: salt, garlic, parsley, bay leaf, thyme, paprika Use the central part of the fish. Clean it well and cut it into thick slices. Heat the oil in a saucepan. Chop the onion into small pieces and fry; stir continuously until the onion turns golden brown. Then add two cloves of crushed garlic, a tablespoon of chopped parsley and another not very full one of paprika. Cut the potatoes into not very large slices of about 6 mm and mix well, sprinkling the tablespoon of flour over everything. When the potatoes are fried, just enough eater is added to cover them. Then the right amount of salt is added as well as six peppercorns and a clove, both ground, and bay leaf, thyme and parsley. Cook the stew for a quarter of an hour and when the potatoes are done, put them into a clay dish. The slightly salted hake slices are arranged on top of the potatoes. Put the dish into the oven for another ten or twelve minutes. it is served in the clay dish.

Today, Spanish cooking may be the last great undiscovered cuisine for Americans, although it's not likely to remain that way for long. The foods of Spain are infinitely appealing, linked as they are to such robust Mediterranean ingredients as olive oil, garlic, dried legumes, grains, tomatoes, and peppers. The Romans found Spain ideal for growing olive trees and grapevines, yielding oils and wines that were the envy of the ancient world and are the country's pride today. The Moors, who occupied Spain for nearly 800 years, brought exotic saffron, cumin, and coriander to the cooking. They also established an elaborate canal system that made it possible to grow rice and transformed Spain's eastern coast into a veritable garden. Europe's discovery of America brought previously unknown tomatoes, peppers, and potatoes to Spain (just try to imagine Mediterranean cooking without these characteristic ingredients), all of which adapted admirably to the Spanish climate and soil.

    Specialties of the Spanish Ingredients for the Spanish table (Clockwise from top right) Calasparra rice, saffron threads, smoked paprika, hard cured chorizo, serrano ham, sherry vinegar, and olive oil Olive oil: Spain's olive oils, used generously in much of the cooking, are noted for their exquisite quality and fine flavor, ranging from smooth and subtle to fruity and robust. Rice: Spanish rice, sometimes called Valencia rice, is a short grain variety with a firm texture that readily absorbs flavors from other ingredients, making it ideal for paellas. We used white Calasparra rice, although any brand of Italian Arborio will work. Paprika: Unlike the sweet and hot paprikas in American supermarkets, the highest-quality Spanish paprika is smoked and very strong, so a little goes a long way. Spain's best is pimenton de La Vera, slowly smoked to give it a most distinctive flavor and aroma. It brings simple grilled foods to life and gives an exciting lift to paellas and stews. There are several varieties of smoked paprika; we used La Chinata's bittersweet smoked paprika, available from Tienda. Serrano ham: One of the secrets to the richly robust flavors of Spanish cuisine is porkspecifically, cured ham, or jamon. This air-cured ham is used in traditional tapas when thinly sliced and is an exceptional addition to stews and sauteed vegetables.

    52nd Traditional Spanish Market
    at the Plaza in Santa Fe, New Mexico
    Santa Fe, NM The rich Hispanic culture of Northern New Mexico will be celebrated at the 52nd Traditional Spanish Market, the oldest and largest exhibition and sale of traditional Spanish colonial artforms in the United States. The 2003 Market will be held on Saturday, July 26th from 8:00 a.m. to 5:00 p.m. and Sunday, July 27th from 9:00 a.m. to 5:00 p.m. on the downtown Plaza in Santa Fe, NM. A summer tradition in Santa Fe, Spanish Market features the work of 300 adult and youth Hispanic artists practicing the traditional regional arts. Spanish Market also features music and dance, demonstrations and regional food and is a rare opportunity for visitors to enjoy a taste of New Mexico's vibrant Spanish culture, both past and present. Admission is free to the public.
    All of the participating adult artists many of whom are nationally recognized are screened to ensure both the quality and authenticity of their artwork.Spanish Market is a destination event that attracts not only the local community but also visitors and serious collectors from across the nation and around the world.The following handcrafted Spanish colonial arts are featured at both Spanish Market and Winter Market in December:
