    EDUCATIONAL PROGRAMS Nutrition Education
    Nutrition is an important piece of the overall health, performance, and well being of every student-athlete. Team ENHANCE'S nutritional motto is "Fuel Your Body for Performance". The program strives to provide female student-athletes with practical education and personal support they need to select the fuel to maintain energy, be successful in their sport and in their school work, and to have better health for life. They are educated about nutrition so they can make "winning" food and fluid choices to fuel their workouts and competitions. Throughout their college careers, student-athletes can benefit from individual nutrition consultation. All freshmen student-athletes are required to take the Sports Nutrition Course, a one-credit, 15-hour class that is the foundation of the athletic nutritional health program at UTK. The course is current with the latest research results and the practical needs and interests of a changing student-athlete population in demanding sport environments. Team ENHANCE Educational Seminars
    Educational Seminars are held once a year for the student-athletes and the coaching staff. The administration believes that these special seminars are essential and has made them mandatory. Nationally renowned speakers regularly cover issues of alcohol and substance abuse, eating disorders, diversity, assault, trauma (date rape, rape, childhood abuse), depression, learning disabilities, denial, and breaking the "don't talk rule". At our most recent seminar, Joetta Clark, a four-time Olympic track star, spoke to the student-athletes about what it takes to be the best in their sport.

    Extension Program Teaches Nutrition to Eager Learners
    by J. Laurie Byrne S tudents at Oakmont Elementary School in Dickson don't just look at bright laminated cards hanging over each food item in the cafeteria line. They study the graphic cards. These students know that there's a food item labeled incorrectly, and there's a good chance that a food item is misspelled. Whoever finds a mistake gets a prize. Today, an orange food card labeled an apple as a meat. Jessica Bearden, a first-grader, knew better. Yesterday, Chad Ragan, a fifth-grader, discovered that cabbage was misspelled on a green card. The real prize is that the language-based experience teaches not only vocabulary but also good nutrition. Behavioral changes result from daily reinforcement of what the components of the five food groups are and the recommended number of daily servings from each group. "Home life for children today is so unstructured that they just don't learn how to eat at home. We're teaching them how to make healthy food choices," said Oakmont cafeteria manager Shirley Cavender, who encourages student participation by having the children write the names of foods on the cards.

    In Tennessee, the WIC program provides nutrition education, health care referrals, breastfeeding support and supplemental nutritious foods to nearly 150,000 women, infants and children under age five through health departments in 95 counties. About WIC Food, nutrition counseling, and access to health services are provided to low-income women, infants, and children under the Special Supplemental Nutrition Program for Women, Infants, and Children, popularly known as WIC. WIC provides federal grants to states for supplemental foods, health care referrals, and nutrition education for low-income pregnant, breastfeeding, and non-breastfeeding postpartum women, and to infants and children who are found to be at nutritional risk. Established as a pilot program in 1972 and made permanent in 1974, WIC is administered at the federal level by the Food and Nutrition Service of the U.S. Department of Agriculture.

ASTPHND has conducted periodic profiles of the public health nutrition workforce since 1985. In addition to their strong commitments to our teaching and service programs, our faculty are actively involved in research aimed at solving problems in dietetics and hotel, restaurant and travel. A current listing of our Food and Nutrition faculty and their areas of research interest follows: ANDERSON, Sara Long, Associate Professor and Director, Didactic Program in Dietetics, PhD, RD , Southern Illinois University Carbondale, 1991. Dr. Anderson received her doctorate in Health Education and is the director of our undergraduate Dietetics program. She practiced as a clinical dietitian for 11 years before pursuing her career in academia. Her specialty is medical nutrition therapy, nutrition education, and nutrition assessment. Dr. Anderson has been active in the leadership of The American Dietetic Association since 1982. She is currently serving in the House of Delegates as a Professional Issues Representative for Dietetic Education. Project Description: The vision of the CYFAR project in Tennessee is to strengthen community programming and build capacity within the Extension Service to work with children, youth, and families at-risk. The three at-risk communities of Grundy, Haywood and Perry represent rural and urban areas. The primary focus of the project in all three counties is educating parents, child care providers and youth through established resource centers or "lending libraries" and, through group training strategies.
    The Electronic Connectivity initiative is very well established at all three primary sites. Training has been completed at our new Perry County site. Hardware installations have been performed at 3 Extension sites and 9 non-Extension sites. Connectivity is used to provide education and resources for parents, youth, children, and child care providers.

    Health Program: It's Fall, Get the Flu Shot Not the Flu
    Background

    There is a need for health education regarding the promotion of the vaccine preventable influenza disease and a need to make influenza vaccine more available to adults and high risk audiences in rural Tennessee. To meet this need the UT Agricultural Extension Service and the UT College of Pharmacy have collaborated to bring county teams of community pharmacists and Extension educators together to deliver an Influenza Immunization Education and Service Program. By combining service and education, the program can increase the influenza vaccination rates in Tennessee. Program Description
    The program goal is to contribute to increasing the number of Tennessee residents receiving the flu shot. This was accomplished through the following objectives:
    $ To increase the number of flu shots administered in nontraditional settings.
    $ To deliver the program through county teams of pharmacists certified to administer the flu shot and Extension educators.
