Cooking With Kids on Thanksgiving Day
On "Turkey Day", when most mothers are praying that their children will stay out of the kitchen, I am actively assigning duties to my three angels:-). I want them to feel that they are part of the celebration, too. Here Are Some Helpful Tips :-) For new cooks under the age of eight, keep it simple. Find recipes with few steps and fairly predictable results. Go for quick breads, salads, and pastas. Be realistic about children's abilities-and be careful! Explain the dangers inherent in any cooking procedure. Make clear which steps you'll do and which steps they'll do. Put out only those ingredients that are called for. Remember that things obvious to an adult are not obvious to a child. Include kids in the menu planning. This also helps you predict what someone is and isn't going to eat. Involve children in the list-making: food lists. bowl lists, pans list, who's bringing what lists, and when lists. Incorporate school lessons into the cooking. Practice math skills by measuring; learn chemistry by watching muffins rise; create art by making fancy garnishes. Allow extra time for mishaps. If you want kids to enjoy cooking, keep the atmosphere light and your sense of humor intact. Otherwise you'll spoil all of the fun!

Over the years, USDA's Meal and Poultry Hotline home economists say these are the six questions they hear most often.
How long will turkey last in the freezer? Is it safe to use a turkey I've had frozen since last Thanksgiving?
Yes, a whole frozen turkey can be stored in your home freezer at 0o F for up to one year without appreciable loss of quality. To prevent freezer burn, wrap the turkey in heavy freezer paper.
Which tastes better, fresh or frozen turkey? If I choose a fresh turkey, how long will it keep in my refrigerator?
There is no significant difference in quality between a fresh turkey and a frozen one. But you can only keep a fresh turkey refrigerated 1-2 days before cooking.
How should I thaw turkey? How can I quickly thaw a turkey when time has run out?
Thawing your turkey in the refrigerator is the preferred method. Allow one day for each five pounds. In a hurry? Thaw the turkey in a clean sink. Put it in a heavy freezer bag secured with a twist tie. Cover the bird with cold water, changing the water every 30 minutes to keep it cool. Allow 6-9 hours for a 12- to 16-pound turkey, 9-11 hours for a 16- to 20- pound bird.

(draft copy thanksgiving 2000) As a rule the standard Thanksgiving Dinner will consist of something like: a roasted turkey, candied yams, a couple of veggies, a salad, and of course pumpkin pie. While there is many variations to this menu, there are a few things they all have in common. There will most likely be a bird of some type and someone will be working hard to pull off this wonderful feast. Now while we all dream of the perfect dinner, more times than we care to admit things just don't go as planned. Some of the more memorable potatioal disasters I remember are:
  • More guests than I planned for show. It's only hours before serving time and the @#$% bird is still frozen like a rock. The oven dies, Wednesday night. You don't find out that you are cooking the meal until Wednesday night. Cooking for 50 people in a VERY SMALL apartment kitchen.
Then there are the horror stories from friends and family:
  • The daughter who wasn't experienced, cooking her first holiday meal for her new hubby and friends. Nice looking turkey, but noticeabley undercooked. The friend who's dog ran off with the bird.

  • 1/2 cup all purpose flour
  • 3 tbsp. butter
  • 12 oz fresh Shitake mushrooms, sliced
  • 1 tbsp. plus 1 tsp. chopped fresh rosemary
  • 4 cups canned chicken broth
  • 1/3 cup whipping cream
  • 2 tsp.thyme

Put flour in bowl, melt butter in heavy large saucepan over medium-high heat. Add
mushrooms and rosemary and sauté' until mushrooms begin to soften, about 3 minutes.
(Can be made hours ahead.
Cover flour paste tightly. Let paste and mushrooms stand at room temperature)
Add enough chicken broth to measure
5 cups; add to saucepan with mushrooms.
Add flour paste and whisk until smooth.
Bring mixture to boil, stirring frequently. Boil until thickened to light
gravy, about 10 minutes. Mix in cream and thyme. Season with salt and pepper. Serve with turkey.

Seattle WA: I have been told that it is better to leave on the potato skins when fixing mashed potatoes as this is the only part of the potato that has vitamins and minerals. Is this true?
Melissa Kelly: It's true that it does have vitamins, but it's not the only part that has vitamins. We only leave the jackets on when using new potatos.
At 350* how long will it take for an 18 pound turkey ?
Melissa Kelly: Generally I start the bird on high (450) for the first 15 minutes, and then turn the oven down to 350. The 15 minute per pound rule is pretty accurate, but I'd use a meat thermometer to test. You want to pull the bird out between 135-140 degrees.

Just a few days ago I posted on how people looking for Thanksgiving recipes are finding their way to my Recipes page . My recipe pages get quite a few hits actually regardless of the season (I consider several hits a day for a page that has almost no in-links and presents content similar to those on huge commercial sites quite impressive). It's hard to tell whether people are finding what they are looking for but just in case they are, I'm happy to help. One person did leave a note in my Guestbook just the other day and I wanted to share that: I was looking for a Cherry Soup recipe for my boss. She had mentioned that her Mom used to make it and she never got the recipe from her before her Mom passed away. I think she will really like this one. In fact, I think I'll make it and surprise her with it! Thanks a lot. Sue in Sonoma, Ca.
