81. How To Have Your First Thanksgiving
I, not being used to cooking at all, let alone cooking for the whole family atthe holidays, got involved in a All in all, we had a great thanksgiving.

Since my sister and I live together, and my brother lives in the same town, we decided to invite our parents to our house for Thanksgiving last year. It was the first time we had planned Thanksgiving from start to finish. We made a lot of mistakes, and we wanted to share them in the hopes that no one else would make the same mistakes! We did do one thing right, (at least I think so), we had our first Thanksgiving while we were still single (essentially). We only had our folks and ourselves to worry about; we didn't have crying kids, crazy in-laws to appease, or distant relatives to entertain. We only had to figure out how to prepare, cook and serve the meal.
1. Defrost your turkey days in advance. I won’t tell you how we did it, because I’m afraid you’d all get salmonella, and I don’t want to get sued. Suffice to say, put that turkey in the fridge and then call your mom, dad, nearest adult relative, or (as I did) ask your co-workers how they defrost their turkey. We brought our turkey home three days before Thanksgiving, and I put it in the freezer. I didn’t think about it, I just put it away! It was huge, and I wanted it out of the way! Once I found out (at work) that I should have already been defrosting the thing in the fridge, I panicked and I was afraid we would have to serve a big block of iced turkey. 2. Decide the menu a week in advance. We decided two days in advance (which we thought was great). However, our parents decided to take a vacation on the way to see us, and were not only out of pocket half the time, but (since they weren’t at home), couldn’t get the recipes we needed to prepare our “traditional” Thanksgiving side dishes. We had to wing it. Make sure you can get those recipes, better yet, ask your family for them now, and put them someplace special. You’ll want those later, and it’s a big hassle to spend half the holidays on the phone. We know! When our parents had their cell phones turned on, we were calling them! I think they “accidentally” shut them off, just to have a few moments of peace and quiet!

    To prepare a festive Thanksgiving meal that bolsters health and weight goals instead of undermining them, the American Institute for Cancer Research (AICR) recommends more plant-based food than animal-based food at both the cooking and serving stages. In the pot and on the plate, a healthy, holiday proportion is two-thirds (or more) vegetables, fruits, whole grains and beans to one-third (or less) animal protein. According to Melanie Polk, AICR's Director of Nutrition Education, "With a few simple cooking techniques, traditional Thanksgiving dishes can be made more health protective, more moderate in fat and calories, and still great tasting. Instead of preparing a stuffing with sausage or turkey giblets," says Polk, "increase the proportion of plant-based foods by using dried fruits - apples or apricots, for instance - and chestnuts or other nuts. They provide great flavor and crunchy texture, plus antioxidants and other substances that protect against cancer and other chronic diseases." Another example is the traditional dish of baked sweet potatoes. Sweet potatoes are rich in cancer-fighting antioxidants. Unfortunately, their natural rich taste is often overwhelmed in traditional holiday dishes by excessive amounts of butter, cream and sugary ingredients. "To heighten the sweet potato's flavor and sweetness," Polk suggests, "add apples, which contain quercetin, an especially powerful antioxidant, to boost health protection."

    Hoppin' John Yields 4 to 6 servings Southerners may make resolutions for the New Year, but they know success (or lack of it) depends more on what is eaten on 1 January than on all the good intentions in the world. More black-eyed peas and collards are consumed on that day than any other time of the yearpart of an antique gastronomic insurance policy. Collards are for a steady supply of folding green in the coming year; black-eyed peas for plenty of pocket change. Hoppin' John is a sort of jambalaya with a light touch. Do not stew the different elements into a homogeneous mush. Each pea, grain of rice, chunk of tomato, and piece of scallion should retain its individual identity, flavor, and texture. 2 cups (475 ml) cooked Black-eyed Peas 2 cups (475 ml) cooked rice 1 cup (235 ml) chopped fresh tomato 1/2 (118 ml) finely chopped scallions 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper Cheddar cheese, grated (optional)

    Cornbread Dressing (Turkey Stuffing)
    A Thanksgiving Favorite
    Ingredients:
    • Cornbread - bake in 9" x 11" inch pan - crumbled
      Recipe for homemade cornbread here
    • 12 + slices of any kind of bread (except rye) cubed
    • 1 bunch of chopped celery
    • 1 med. onion, grated
    • 2 tbsp sage
    • 1 1/2 cup turkey broth
    • 1 cube margarine
    • Milk to moisten
    Crumble cornbread into a large bowl. Add cubed bread, celery, onion, sage and turkey broth. Melt margarine in a small sauce pan or microwave and mix in. If mixture is too dry, add in a little milk to moisten, or add more margarine. Stuff turkey and bake according to instructions (see The Butterball Turkey Page When turkey is done, remove stuffing from inside and serve separately in a bowl.

You would think cooking a turkey is not that big a deal but looking at all the articles in the current November issues of cooking magazines, you are suddenly faced with a whole bunch of choices. For example, first you have to decide what kind of turkey you're going to buy - fresh, frozen, free-range, natural, self-basting, kosher, with or without a pop-up thermometer. When I was a kid back in the 60's, I don't remember having that many choices, at least I didn't think we did. My mom bought a great big frozen turkey at our local supermarket. We did have a local butcher where she bought most of our meat and cold cuts, (I used to love when the butcher handed us kids a slice of rolled up baloney) but I don't remember her buy our Thanksgiving turkey there. I can tell you one thing. It wasn't a self-baster pumped up with water and oil and it sure didn't have a pop-up thermometer.

So, for all you who love Banana Nut Bread, but don't have the recipe...here's for yummy cooking! Mother wrote: "This is a fantastic banana bread recipe, it came from your great-grand aunt.
    1 Cup sugar 3 large bananas
    1/2 Cup Shortening 3 Tblsp. sour milk 2 eggs 1 tsp. baking soda 1/2 Cup nuts 2 Cups flour, pinch of salt Mix all the ingredients together, pour into a greased and floured loaf pan and bake at 350 for one hour. Ovens may vary so check it at about 50 min to see if it needs the full hour. Toothpick in center comes out clean - it's done."

    Roasting times for turkey
    For tenderness and doneness, the internal temperature of turkey, as registered on a meat thermometer, must reach a minimum of 180 degrees in the innermost part of the thigh before removing it from the oven. Juices should run clear.
    For optimum safety and uniform doneness, it is recommended to cook the stuffing outside the bird. If stuffing your turkey, the center of the stuffing must reach 165 degrees. Turkey breast should reach 170 degrees.
    Drumsticks, thighs and wings should be cooked until fork-tender. This chart, based on information furnished by the U.S. Department of Agriculture, applies to chilled, fresh or completely thawed turkey, roasted in a shallow, open pan in a conventional oven set at 325 degrees. For a truly accurate indication of when turkey is done, use a meat thermometer every time.
